Number Of Ingredients 15

1 1/4 cups flour, plus extra for dusting
Pinch of salt
1 stick butter, cut into small cubes and frozen
1/4 cup ice water
16 ounces fresh blueberries
2 Golden Delicious apples, cored, peeled and cut into 1/2-inch dice
1/2 cup sugar
1/4 cup cornstarch
1/2 teaspoon ground cinnamon
2 teaspoons fresh lemon juice
Pinch of salt
2 tablespoons butter, cut into small cubes
1 egg
2 tablespoons turbinado sugar
Special equipment: 9-inch pie pan

Steps:

  • Preheat the oven to 400 degrees F.
  • For the crust: In a food processor, add the flour and a nice pinch of salt. Pulse very lightly just to blend. Add the butter evenly around the flour and quickly pulse until the flour resembles small crumbles. Slowly pour the water through the spout until the dough begins to come together.   • Remove the dough from the refrigerator and place on a lightly floured surface. Gently roll the disc into a circle big enough to fit into the pie pan and leave a 3-inch overhang. The dough should be about 1/8-inch thick. Using a pizza cutter, trim the edges of the dough. Place the dough into the pie pan and press gently against the bottom and sides to fit the dough into the pan. Pour in the fruit filling, and then scatter the butter evenly around the top of the pie. Fold the extra dough that's hanging off the edge over the top to create the top of the pie crust. Leave a hole in the center for ventilation.
  • Whisk the egg with 1 teaspoon water and brush the top with egg wash and then sprinkle with the sugar.
  • Place in the oven and bake until the crust is golden brown, about 35 minutes. Let the pie rest at least an hour before serving to let the filling set.

6 large cooking apples
1 1/2 cups blackberries
4 ounces sugar
milk, to glaze

Steps:

  • Peel apples, and cut into thick slices. place in saucepan, adding enough water to cover and add the sugar.
  • Simmer for a few minutes until the apples are just cooked but still a bit firm in the centre. drain and set to one side to cool.
  • heat the oven to 220c.
  • Roll out the pastry. place nearly all of the applies in a pie dish. scattering the blackberries evenly over the top sprinkle a dessert spoon of sugar over the berries , then place a layer of apple over that -- this is to stop the stain of the berries going through the pastry.
  • Add the pastry and brush with a small amount of milk and drizzle a teaspoon or so of sugar over.
  • Bake for about 30-35 minutes, until pastry is a light golden color.
  • Note:.
  • I make this pie with minimum pastry and replace the sugar with Splenda for my cousin who is diabetic.
  • Serve hot or cold with either, light cream or Ice Cream.

3 c sweet or tart sweet apples; cored, peeled, and sliced
1 c cranberries; fresh, chopped
2/3 c white sugar
3 Tbsp all-purpose flour
1 tsp (heaping) apple pie spice
2 tsp rum (cook's choice) or rum extract to taste
1 tsp pure vanilla extract
2 refrigerated pie crust or your own pastry for double crust pie
1 egg; whipped for crust wash
1 Tbsp heavy whipping cream

Steps:

  • 1. Preheat oven to 450.
  • 2. Wash and dry cranberries and coarsely chop.
  • 3. Peel apples, wash and core them.
  • 4. Slice apples into nice even slices.
  • 5. Combine apples and chopped cranberries in medium-size bowl.
  • 6. Toss with sugar, flour, and apple pie spice.
  • 7. Pour rum and vanilla into bowl and stir lightly to distribute.
  • 8. Press a pie crust into a traditional shallow 9-inch pan. Do not use a deep dish pie plate.

2 regular pie shells
1/2 Tbsp cinnamon
1 c i can't believe it's not butter
1/2 c splenda half and half

  • 1. Preheat oven to 400 degrees. Wash the all apples. Core and slice the Granny Smith apples. Core and dice the red delicious apple. (removing skins is not necessary)
  • 2. Mix the apples togather in a large bowl.
  • 3. Combine margerin, cinnamon and splenda in a sauce pan. Melt the ingredients to a boil.
  • 4. Add all apple to one pie shell.
  • 5. Pour melted margerine combination over the apples in the pie shell.
  • 6. Place 2nd pie shell over the filled pie shell and pinch the edges. Score the the crust and place the pie in the oven.
  • 7. Bake for 50 minutes.
  • 8. Serve warm. Yummy with sugar-free fat-free whipped toppings or sugar -free ice cream! YUM!
