My boyfriend loved them and said they were really good served in combination with eggs over easy, turkey bacon, sliced apples and toast. I enjoyed mine with good-old ketchup and he had his with salsa. Try playing with the spices in your cupboard if you don't have the basics that I had stocked. Next time I might try a sprinkle of cayenne pepper to spice it up a bit. This recipe could serve 4 hungry people.

3 russet potatoes (chopped and unpeeled)
3 tablespoons olive oil
1/2 teaspoon sea salt (to taste)

5 pounds red potatoes, roughly chopped/diced
4 cloves garlic, minced
1 onion, chopped
1 green bell pepper, seeded and roughly chopped
1 red bell pepper, seeded and roughly chopped
1/4 cup olive oil
1/2 stick butter, melted
1 teaspoon seasoned salt
1/2 teaspoon cayenne pepper
Kosher salt and freshly ground pepper

Steps:

  • Preheat the oven to 425 degrees F.
  • In a large bowl, toss together the potatoes, garlic, onion, green bell pepper, red bell pepper, olive oil, butter, seasoned salt, cayenne pepper and some kosher salt and pepper.

Kosher salt
3 slices bacon, cut into lardons
1 tablespoon olive oil, plus more if needed
1/2 medium Spanish onion, diced
Pinch crushed red pepper
1 red bell pepper, diced
1/2 teaspoon seafood seasoning, such as Old Bay
2 tablespoons thinly sliced fresh chives
