We always had these beans with our Christmas dinner. They are very flavorful and a family favorite. Most of the work can be done in advance. Although there is alot of garlic, the cooking process mellows it considerably.

CRAZY-SIMPLE COTTAGE HAM, POTATOES, AND GREEN BEANS
Cottage ham is one of my favorite dishes to eat because it's rich in flavor and incredibly simple to make. Requiring only five ingredients and five minutes of prep time, this dish could quickly become a go-to meal in your household. If you can't wait the hour it takes to cook, drop it in a slow cooker in the morning, and it'll be ready when you get home.

Steps:
- Combine ham hocks, onion, garlic, celery, thyme, bay leaf, chile, 3/4 teaspoon salt, and the water in a large pot. Bring to a boil over high heat. Reduce heat, and simmer, uncovered, 1 hour 30 minutes.
- Transfer ham hocks to a plate. Discard chile, and add potatoes to pot; simmer until just tender, 10 to 12 minutes.
- When ham hocks are cool enough to handle, pull meat off bones (discard bones), shred into bite-size pieces, and return to pot. Add green beans, and return to a simmer. Cover, and cook until beans are just tender, about 8 minutes. Season with pepper. Serve vegetables and meat with a slotted spoon; reserve broth for another use. If storing leftovers, store in broth.
Tips:
- For the best flavor, use fresh green beans. If using frozen green beans, thaw them before cooking.
- To save time, you can cook the green beans and ham ahead of time. Simply reheat them before serving.
- If you don't have any ham on hand, you can substitute bacon or sausage.
- Add a splash of white wine or chicken broth to the pan for extra flavor.
- Serve the green beans and ham with mashed potatoes, rice, or pasta.
Conclusion:
Green beans and ham is a classic dish that is easy to make and always a crowd-pleaser.
