1 cup milk or any combination of milk, half-and-half, or cream
Pinch of salt
2 ounces bittersweet (60% cacao) or semisweet chocolate, broken into small pieces or chopped
1/4 teaspoon vanilla extract
1 tablespoon unsweetened cocoa powder (optional)

Steps:

  • Bring the liquid almost to a simmer with the salt over medium heat, then remove it from the heat and add the chocolate. Let it rest for 1 minute, then whisk the mixture until chocolate is melted and liquid is smooth. Stir in vanilla and taste it. If you want a stronger, deeper chocolate flavor, whisk in the cocoa. If necessary, reheat the liquid over medium-low heat, stirring.
  • If you like it frothy, or the cocoa powder didn't blend in smoothly, blend it in the blender.

This is my recipe for home-made hot chocolate. I couldn't find one like it here on food.com, and was curious about the nutritional content. A little less sweet than some and a little more chocolatey than others, it also makes good chocolate milk (Just allow the syrup to cool and add to cold milk.) Be adventurous and change up the flavors if you like. A sprinkle of cinnamon, a few drops of mint or orange extract, or half a spoonful of instant coffee can turn a simple cup of cocoa into a gourmet experience. This could be easily multiplied to serve more than one.

1 tablespoon sugar
1 tablespoon unsweetened baking cocoa
1 tablespoon water
1 pinch salt
1 cup milk
1/8 teaspoon vanilla extract

Steps:

  • Mix together sugar, cocoa and salt in a small saucepan.
  • Whisk in water, stirring until smooh.
  • Bring to a boil and cook for 1-2 minutes, stirring constantly, until dark and syrupy.
  • Add milk and heat just until hot Do not allow milk to boil.

  • Pour into a 10 ounce mug, garnish as desired, and serve.
  • Note - Add other dry spices, such as cinnamon, cayenne or instant coffee during Step 1. Add liquid extracts, such as orange or mint (or flavored liqueurs) at Step 5.
  • Optional - You could make this in your microwave, if you wanted. Mix the syrup right in your mug. Cook on "high" for about 30 seconds. Add milk and heat on "medium" for about 2 minutes. Add vanilla and serve.
