Yield Makes 6 servings

Number Of Ingredients 6

1 3/4 pounds small unpeeled Yukon Gold potatoes (about 16), scrubbed
6 large garlic cloves, peeled
1 tablespoon extra-virgin olive oil
2 tablespoons (1/4 stick) butter
1/2 cup sour cream
3 tablespoons chopped fresh chives

Steps:

  • Generously butter glass pie dish. Cook potatoes and garlic in medium pot of boiling salted water until potatoes are tender, about 15 minutes. Drain; let stand 5 minutes. Discard garlic. Arrange potatoes close together in prepared dish. Using wooden spoon, smash potatoes coarsely until they split open. Drizzle with oil; dot with butter. Sprinkle with salt and pepper.
  • Preheat broiler. Broil potatoes until crisp and golden, watching closely to avoid burning, 8 to 10 minutes. Top with dollops of sour cream; sprinkle with chives.

These potatoes are also great for meal prep. I make a big batch on the weekend and then eat them throughout the week.

I love that these potatoes can be made ahead of time. I usually make them the night before and then reheat them in the oven before serving.

These potatoes are a great way to use up leftover mashed potatoes. Just smash them up and bake them with some garlic and herbs.

I've also tried making these potatoes with different herbs, like rosemary and thyme. They're always delicious.

I like to add a little bit of grated Parmesan cheese to these potatoes before baking them. It gives them a nice cheesy flavor.

I'm not a big fan of garlic, but I really enjoyed these potatoes. The garlic flavor was subtle and not overpowering.

These potatoes were the perfect side dish for my roasted chicken. They were garlicky and flavorful, and they really complemented the chicken.

I was skeptical about smashing the potatoes before baking them, but I'm so glad I did. It really helped to create that crispy exterior and fluffy interior.

I've made smashed potatoes before, but this recipe is by far the best. The garlic and herbs really make a difference. I will be using this recipe from now on.
