Tips:

  • Use fresh pineapple: Fresh pineapple gives the muffins a more intense flavor than canned pineapple. If you don't have fresh pineapple, you can use canned pineapple, but be sure to drain it well before using.
  • Toast the coconut: Toasting the coconut adds a nutty flavor and aroma to the muffins. To toast the coconut, spread it out on a baking sheet and bake it in a preheated oven at 350 degrees Fahrenheit for 5-7 minutes, or until it is lightly browned.
  • Use a muffin pan with liners: Muffin liners make it easy to remove the muffins from the pan and prevent them from sticking. If you don't have muffin liners, you can grease the muffin pan with cooking spray.
  • Don't overmix the batter: Overmixing the batter can make the muffins tough. Mix the batter just until the ingredients are combined.
  • Bake the muffins until a toothpick inserted into the center comes out clean: This will ensure that the muffins are cooked through.

Conclusion:

These piña colada muffins are a delicious and easy-to-make treat that is perfect for any occasion. They are moist, flavorful, and have a tropical flair. Whether you are looking for a breakfast muffin, a snack, or a dessert, these piña colada muffins are sure to hit the spot.
