I received this recipe when I was in the third grade. Our teacher made this for us in class on St. Patrick's Day, and I've made this very simple, hearty meal every year in March since then.

2 tablespoons vegetable oil, or as needed
2 pounds cubed beef stew meat
6 potatoes, peeled and diced
4 medium yellow onions, sliced
1 ½ cups water
2 beef bouillon cubes
salt and ground black pepper to taste

Steps:

  • Heat a skillet over medium heat and add oil. Cook stew meat until browned on all side, 5 to 10 minutes.
  • Transfer browned meat to the insert of a slow cooker. Add potatoes, onion, water, bouillon cubes, salt, and pepper.

2 tablespoons vegetable oil
2 large potatoes, peeled and cubed
2 medium carrots, peeled and chopped
1 medium onion, cut into chunks
1 (14 ounce) can diced tomatoes
1 cup brewed coffee
1 envelope onion soup mix
2 cubes beef bouillon
1 tablespoon low-sodium soy sauce
1 tablespoon Dijon mustard

Steps:

  • Coat beef thoroughly with flour.
  • Heat oil in a large saute pan over medium heat. Add beef and cook until browned on all sides, 7 to 10 minutes.
  • Transfer beef to a slow cooker and add potatoes, carrots, onion, diced tomatoes, coffee, soup mix, bouillon cubes, soy sauce, and mustard.

½ cup all-purpose flour
2 ½ teaspoons paprika, divided
salt and ground black pepper to taste
3 (5 ounce) skinless, boneless chicken breasts, cut into chunks
2 tablespoons olive oil
1 (8 ounce) package sliced portobello mushrooms
1 medium onion, chopped
5 medium potatoes, quartered
5 medium carrots, cut into 1-inch pieces
2 stalks celery, cut into 1-inch pieces
3 cloves garlic, whole
1 (16 ounce) can lager beer
1 tablespoon Worcestershire sauce
1 (14.5 ounce) can chicken broth
4 ounces tomato paste
1 tablespoon poultry seasoning
3 tablespoons cornstarch
3 tablespoons cold water

Steps:

  • Mix flour, 1 1/2 teaspoons paprika, salt, and pepper together in a medium bowl. Coat chicken with the flour mixture, reserving 1 tablespoon for cooking.

2 tablespoons olive oil
3 tablespoons all-purpose flour
2 pounds beef chuck, cut into 1 1/2-inch cubes
1 pound carrots, peeled and cut into 1-inch chunks
6 large potatoes, peeled and cut into large chunks
1 white onion, cut into large chunks
2 cloves garlic, minced
2 cups beef broth
1 (6 ounce) can tomato paste
1 (12 fluid ounce) can or bottle Irish stout beer (e.g. Guinness(r))
1 tablespoon cold water
1 tablespoon cornstarch

Steps:

  • Heat the oil in a large skillet over medium heat. Toss beef cubes with flour to coat, then fry in the hot oil until browned. Place the carrots, potatoes, onion and garlic in a large slow cooker. 1 tbsp sunflower oil
200g smoked streaky bacon, preferably in one piece, skinned and cut into chunks
900g cheap stewing lamb like middle neck or scrag (ask at your butcher counter), cut into large chunks
small bunch thyme
3 onions, thickly sliced
5 carrots, cut into big chunks
6 medium potatoes, cut into big chunks
700ml lamb stock
3 bay leaves
85g pearl barley
1 large leek, washed and cut into chunks
small knob of butter

Steps:

  • Heat the slow cooker if necessary, then heat the oil in a frying pan. Sizzle the bacon until crisp, tip into the slow-cooker pot, then brown the chunks of lamb in the pan. Transfer to the slow-cooker pot along with the thyme, onions, carrots, potatoes, stock, bay leaves and enough water to cover the lamb. Cover and cook on Low for 7 hrs.
  • Stir in the pearl barley and leek, and cook on High for 1 hr more until the pearl barley is tender.
  • Stir in the butter, season and serve scooped straight from the dish.

3 lbs leg of lamb, shoulder chops or 3 lbs lamb shanks
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup water
3 onions, chopped
2 large carrots, chopped
2 tablespoons fresh Italian parsley, chopped
2 tablespoons fresh thyme or 2 tablespoons savory, chopped
2 cups beef stock or 2 cups chicken stock
2 1/2 lbs round potatoes (Iabout 8) or 2 1/2 lbs long potatoes, peeled and cubed (Iabout 8)
2 tablespoons butter, softened
2 tablespoons all-purpose flour

Steps:

  • Sprinkle both sides of lamb cuts with half of the salt and pepper. Brown lamb all over, in batches, in a skillet over medium-high heat. Place in slow cooker.
  • Add water to skillet and bring to a boil, scraping up brown bits. Pour liquid into slow cooker.
  • Return skillet to medium heat and cook onions, carrots, parsley thyme and remaining salt and pepper for about 8 minutes until softened and beginning to turn golden.
  • Scrape into slow cooker.
  • Add stock and potatoes. Cover and cook on low for 8 hours or until lamb is tender and easily pulls away from the bone.
  • In a small bowl, mash together butter and flour until well combined. Uncover slow cooker, and stir butter mixture into stew and cook on high for 20 minutes or until slightly thickened.
