2 tablespoons flour
1 teaspoon salt

Time 30m

Yield 4 serving(s)

Number Of Ingredients 8

1 medium onion, chopped
2 -3 garlic cloves, crushed
2 tablespoons butter or 2 tablespoons olive oil
1 1/2 liters chicken stock (can use stock cubes) or 1 1/2 liters vegetable stock (can use stock cubes)
400 g frozen chopped spinach, defrosted
1 cup dry white wine (optional)
1 teaspoon dried tarragon
salt and pepper

Steps:

  • Heat the butter/oil in a saucepan.
  • Saute the onions and garlic until the onion softens.
  • Add the stock and bring to a boil.
  • Add the defrosted spinach, dried tarragon and white wine (if used).
  • Reduce heat to a simmer for about 20 minutes.
  • Just before serving you may have to use a stab-mixer to get the right consistency.
  • Season with Salt and Pepper.

Tips:

  • Use fresh spinach. Fresh spinach has a more vibrant flavor and color than frozen spinach.
  • Wash the spinach thoroughly. Spinach can be gritty, so it's important to wash it thoroughly before using it.
  • Don't overcook the spinach. Spinach cooks quickly, so it's important to not overcook it. Overcooked spinach will become mushy and lose its flavor.
  • Use a variety of vegetables. In addition to spinach, you can add other vegetables to your soup, such as carrots, celery, onions, and potatoes.
  • Season the soup to taste. Spinach soup can be seasoned with a variety of herbs and spices, such as salt, pepper, garlic, and nutmeg.
  • Serve the soup with a dollop of sour cream or yogurt. Sour cream or yogurt will add a creamy richness to the soup.

Conclusion:

Spinach soup is a healthy and delicious soup that is perfect for a quick and easy meal. It is packed with nutrients, including vitamins A, C, and K, and is a good source of fiber. Spinach soup can be made with a variety of ingredients, so you can customize it to your own taste.
