2 loaves (1 pound each) frozen bread dough, thawed, divided
Ground cinnamon to taste
1/2 cup butter, cubed
1 cup packed brown sugar
1 package (4.6 ounces) cook-and-serve vanilla pudding mix
2 tablespoons milk
1 cup chopped pecans
1/2 cup raisins, optional

Steps:

  • Cut each loaf of dough into 18 pieces. Arrange half in a greased 13-in. x 9-in. baking dish. Sprinkle with cinnamon. , In a large saucepan over low heat, melt butter. Remove from the heat; stir in the brown sugar, pudding mix and milk until smooth. Pour over dough. Sprinkle with pecans and raisins if desired. Arrange remaining pieces of dough over top. Cover and refrigerate overnight or let stand at room temperature for 3 hours. , Bake, uncovered, at 350° for 35 minutes or until center sounds hollow when tapped with fingers. 2 Tbs. butter, melted
2 Tbs. honey
1/2 cup chopped pecans*
1 package (two 9" by 9" sheets) of puff pastry, thawed
1/2 cup brown sugar
1 Tbs. cinnamon
*toast the pecans slightly for better flavor if you have the time

Steps:

  • Spray a 12-cup muffin tin liberally with a non-stick spray. Preheat the oven to 400 degrees. Mix the butter and the honey and divide the mixture equally among the cups (place about 1 tsp. into each cup). Divide the nuts eequally into each cup, also about a teaspoon. Unfold the puff pastry sheets onto waxed paper, and roll them out slightly to get rid of the creases. Mix the brown sugar and cinnamon together and sprinkle or spread evenly all over the two pastry sheets. Roll up one of the sheets jelly-roll fashion and slice the roll into 6 pieces. Place each piece (on its cut end so you can see the cinnamon sugar spiral) into a cup of the muffin tin, squishing it down slightly into the nuts. Repeat with the other sheet. Bake in the 400 degree oven for about 30 minutes until the buns have risen and are golden brown. Invert immediately onto a waxed paper-lined, rimmed cookie sheet. Very carefully since they are hot, quickly spoon up any scattered nuts and place them on the buns. The syrup will harden into a chewy brittle consistency. Allow to cool 5 minutes and serve.
