1 lb regular sized mushroom (remember finger food)
1 lb Jimmy Dean sausage, HOT is the best
fresh grated asiago cheese or parmesan cheese

Steps:

  • Preheat oven to 375.
  • Lightly spray a rimmed baking pan with PAM.
  • Remove and discard mushrooms stems.
  • Rinse mushrooms and place on pan.
  • Stuff mushrooms with uncooked sausage (trust me).
  • Top mushrooms with a dusting of grated cheese and place in oven for approximately 30 minutes or until sausage is cooked through and cheese is toasty brown.
  • Serve these warm.

3 ounces day-old white bread (about 3 slices), crusts removed
2 scallions, white and light-green parts only, roughly chopped
1 red bell pepper, seeded and roughly chopped
3 ounces fresh goat cheese
1/4 cup finely chopped fresh cilantro leaves
1 ounce dry Monterey Jack or Parmesan, grated on small holes of box grater
1 1/2 teaspoons salt
1/4 teaspoon freshly ground black pepper
48 button mushrooms (about 1 1/2 pounds), stems removed and caps cleaned

Steps:

  • Pulse the bread in the bowl of a food processor until finely chopped. Transfer to a bowl. Place the scallions, bell pepper, and goat cheese in the bowl of a food processor, and pulse until finely chopped and well combined. Transfer mixture to the bowl with the breadcrumbs, and stir. Stir in the cilantro, half the grated Monterey Jack, salt, and pepper.
  • Heat oven to 350 degrees; position rack in the center of oven. Place mushroom caps, cups facing upward, on a large cookie sheet. Spoon a heaping teaspoon of stuffing mixture into each cap. Bake until mushrooms are tender and filling is hot, 15 to 20 minutes. Remove mushrooms, turn oven to broil, and position rack about 4 inches from broiler. Sprinkle mushrooms with remaining grated cheese, and broil until cheese is golden, about 1 minute. Serve immediately.

8oz tub of Phily cream cheese $ chives.
required amount of canola oil for deep frying

  • Preheat canola oil to 350 Wash mushrooms gently pat dry Remove stem by rocking it out back & forth should pop right out leaving a clear void in which to fill after removing all stem fill by using tsp spoon to scoop cream cheese stuff in void pack in using under side of spoon until all filled. coat mushrooms with dry mixture first follwed by wet coating using same coating mixture by adding cold water per instructions drop each mushroom in batter mixture until evenly coated using spoon, tongs ect,ect place in preheated oil cook until crisp and golden if they start leaking cream cheese filling to long remove quickly drain on paper towel allowto cool serve with creamy horsradish sauce before dinner or as a snack delicious

seasoned bread crumbs

Steps:

  • Clean mushrooms & remove stems. Place hollow side up on baking sheet. Fill each with 1 teaspoon of cheese & sprinkle with bread crumbs. Bake at 375@ for 12-15 minutes. Serve hot.
