SIMPLE SWEET AND SAVORY SPICED WALNUTS

Simple Sweet and Savory Spiced Walnuts image

These are really simple and use much less butter than some. They are mildly sweet and mildly spicy---those who love super spicy will have to add cayenne, etc. They are a lovely complement to a glass of sherry or a cheese board to be served with wine. They are a great addition to salads and can be chopped and included in any number of sweet and savory pastries.

SWEET AND SAVORY NUTS

Sweet and Savory Nuts image

These nuts get an extra kick from a sprinkle of ancho chili powder.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Nuts & Seeds     Almonds

Number Of Ingredients 7

1 large egg white
1 teaspoon cocoa powder
1 teaspoon ancho chili powder
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1/4 cup sugar
2 cups nuts (pecans, walnuts, and almonds)

Steps:

  • Preheat oven to 325 degrees.
  • Lightly beat egg white in a large bowl. Add all remaining ingredients except nuts, mixing until slightly frothy. Fold in nuts.
  • Spray or lightly grease a rimmed baking sheet. Pour mixture onto sheet, spreading nuts out in a single layer. Bake until crispy, 40 to 45 minutes, turning once after 20 minutes. Cool completely before serving.

Tips:

  • Choose the right walnuts: Look for plump, whole walnuts with no cracks or blemishes. Avoid any walnuts that are shriveled or have a musty odor.
  • Toast your walnuts: Toasting walnuts brings out their flavor and makes them more fragrant. You can toast walnuts in the oven at 350°F for 10-12 minutes, or in a skillet over medium heat for 5-7 minutes, stirring constantly.
  • Use a variety of spices: The possibilities are endless when it comes to spicing walnuts. Some popular options include cinnamon, nutmeg, ginger, chili powder, and cumin. You can also use savory herbs like rosemary, thyme, and sage.
  • Don't overcrowd the pan: When cooking spiced walnuts, be sure to use a large enough pan so that the walnuts can spread out in a single layer. This will help them cook evenly and prevent them from sticking together.
  • Watch the heat: Spiced walnuts can burn easily, so be sure to keep an eye on them while they're cooking. Reduce the heat if necessary to prevent them from burning.
  • Let the walnuts cool: Once the walnuts are cooked, let them cool completely before storing them. This will help them to retain their flavor and texture.

Conclusion:

Spiced walnuts are a versatile and delicious snack or ingredient that can be used in a variety of dishes. With so many different ways to flavor them, you're sure to find a combination that you love. So next time you're looking for a healthy and satisfying snack, reach for a handful of spiced walnuts.
