Very light and refreshing with the perfect amount of sweetness. Lime juice brightens up the flavor and adds a delightful zing. The texture is soft, reminiscent of a very light sorbet combined with a shaved ice. This is a great recipe to make with plentiful watermelon available in the summertime. It's the perfect ending after a filling summer dinner or a refreshing snack on a hot day. You could even pour a shot of Cointreau® over the top or blend the mixture with tequila and enjoy it as a boozy summer treat.

Yield Makes about 1 1/2 quarts

Number Of Ingredients 4

1 1/3 cups sugar
3 sprigs fresh mint
6 pounds seedless watermelon, flesh roughly chopped (about 8 cups)
Juice of 2 limes

Steps:

  • Cook sugar and 1 cup water, stirring constantly, in a small saucepan over low heat until sugar has dissolved. Add mint. Bring to a boil. Cook 5 minutes. Remove from heat. Cover; let stand 20 minutes.
  • Working in batches, puree watermelon in a blender. Pour through a fine sieve into a large bowl; discard solids.
  • Pour mint syrup through a fine sieve into a bowl; discard mint. Stir syrup into puree. Stir in lime juice. Refrigerate, covered, at least 2 hours (up to overnight).
  • Freeze in an ice cream maker according to manufacturer's instructions. Transfer to an airtight container; freeze at least 1 hour (up to 4 days). Let stand at room temperature 10 minutes before serving.

Tips:

  • Choose ripe, juicy watermelon: The flavor of your sorbet will depend on the quality of your watermelon, so make sure to choose one that is ripe and juicy. Look for a watermelon that is heavy for its size and has a deep red color.
  • Freeze the watermelon in advance: This will help to create a smooth and icy sorbet. Cut the watermelon into chunks and place them in a single layer on a baking sheet. Freeze for at least 4 hours, or overnight.
  • Use a high-powered blender or food processor: This will help to create a smooth and creamy sorbet. If you don't have a high-powered blender, you can use a regular blender, but you may need to blend the sorbet in batches.
  • Add honey or sugar to taste: Watermelon is naturally sweet, but you may want to add a little honey or sugar to taste. Start with a small amount and add more as needed.
  • Serve immediately or freeze for later: Watermelon sorbet is best served immediately, but you can also freeze it for later. To freeze the sorbet, transfer it to an airtight container and freeze for up to 2 weeks.

Conclusion:

Watermelon sorbet is a refreshing and delicious summer treat that is easy to make at home. With just a few simple ingredients and a little time, you can enjoy this delicious sorbet all summer long. So next time you have a craving for something sweet and凉爽的, give watermelon sorbet a try.
