Fast and Delicious Bundt Cake Recipe with a bit of lemony delight. To really make it special instead of powdered sugar, I fill the middle with cherry pie filling and make a confectioners sugar glaze over the top.

1/2 c shortening (crisco)
1/2 c butter
2 c sugar
3 c flour
3 tsp baking powder
1 pinch salt
4 large eggs
1 c milk
1 tsp vanilla extract
2 tsp lemon juice
1 lemon zest, grated

Steps:

  • 1. Grease and flour a 10" tube pan or bundt pan. Set oven at 350 degrees.
  • 2. Cut butter and shortening into dry ingredients. Add eggs, all at once, mixing only until well blended. Add 1/2 of milk.
  • 3. Beat on medium speed of mixer for 3 to 5 minutes, scraping sides of bowl often.
  • 4. Add rest of milk, vanilla, lemon juice and rind. Mix only until blended.
  • 5. Pour into prepared pan and bake for 1 hour or until done. Cake is done when it pulls from sides of pan. Cool on wire rack for 5 minutes and then turn pan over. Sprinkle with powdered sugar before serving.

¼ cup strongly brewed coffee, cooled to room temperature
2 tablespoons instant espresso powder
2 ¾ cups all-purpose flour
2 teaspoons baking powder
¾ teaspoon salt
1 cup unsalted butter, softened
1 (8 ounce) package cream cheese, softened
1 cup white sugar
1 cup firmly packed brown sugar
3 large eggs, at room temperature
1 tablespoon vanilla extract
1 cup Irish cream liqueur (such as Baileys®)
¾ cup mini chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 10-cup Bundt® pan.
  • Mix together coffee and espresso powder in a small bowl or measuring cup until dissolved. Set aside.
  • Mix together flour, baking powder, and salt in a medium bowl until combined.
