2 bags ready to use mesclun greens
Pinch salt
Freshly ground black pepper
Balsamic Vinaigrette, recipe follows
1 pint grape tomatoes
1 yellow bell pepper, seeded, halved and thinly sliced
1 shallot, peeled and roughly chopped
1 tablespoon chopped fresh basil leaves
1/4 cup balsamic vinegar
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1 cup olive oil

Steps:

  • Toss the greens, salt and pepper together with just enough vinaigrette to coat, about 1/2 cup. Place them in a decorative bowl and top with the grape tomatoes and bell pepper. Serve the remaining vinaigrette on the side.

The two different vinaigrettes mixed together are a perfect combination of sweet, tart and tangy. For dinner parties with people I don't know well I usually leave the almonds and dressing on the side in case anyone has food allergies; only once has anyone passed on the almonds and dressing. This salad is also great topped with grilled chicken to make the salad a complete dinner.

2 1/2 cups lettuce (preferably a spring mix)
1/3 cup cucumber, sliced
1/2 cup cherry tomatoes, halved (or grape tomatoes)

3 tablespoons almonds, slivered
1/3 cup balsamic vinaigrette (or Red Wine Vinaigrette)

Don't substitute the ingredients, though, it won't turn out. Been there, tried it, failed, lol. It's awesome just as is!!!!

1 head lettuce, cut bit-sized
1 head cauliflower, cut into small pieces (the flower part)
1 (3 ounce) jar hormel real bacon bits (see note)
1 medium onion, halved, sliced thin
Miracle Whip, to lightly coat (Do not sub or use light)
7/8 ounce McCormick Salad Supreme Seasoning, 1/3 of a 2 . 62 oz. bottle (do not sub.!)
5 1/3 ounces canned parmesan cheese, 2/3 of the green can kind

Steps:

  • Note: The bottle says equivilant to 1 1/2 lbs bacon and do NOT sub immitation; You can also use the new kind that comes in a sealed pouch, use 3/4 to 1 cup, depending on how much bacon flavor you like.
