1/4 cup heavy whipping cream
3 tablespoons beef broth
3 tablespoons dry red wine or additional beef broth

Steps:

  • In a skillet, brown beef in butter; remove and set aside. To the same skillet, add the oil and mushrooms, onion and garlic; saute until tender. Add beef; transfer to a greased 1-qt. baking dish. 1/3 cup red Burgundy wine or 1/3 cup cranberry juice cocktail
2 tablespoons soy sauce
1 clove garlic, minced

2 tablespoons cornstarch
1/4 cup water

  • Be sure all visible fat is trimmed off the meat.
  • Brown on all sides in a large heavy skillet.

4 tablespoons extra-virgin olive oil, divided, plus additional for brushing
4 garlic cloves, pressed

1 tablespoon fresh thyme leaves
2 teaspoons plus 1 tablespoon harissa sauce*

Steps:

  • Cut steak lengthwise in half, forming two 2- to 3-inch-wide strips. Cut each strip into 2- to 3-inch triangles. Combine 2 tablespoons olive oil, garlic, sugar, soy sauce, thyme, and 2 teaspoons harissa in large bowl; whisk to blend. Add beef; toss to coat evenly. 1 red bell pepper, seeded and sliced
1 green bell pepper, seeded and sliced
1 large sweet onion, cut into thin wedges

Steps:

  • Rinse, pat dry and cut the sirloin steaks into 1-inch pieces. Whisk together the teriyaki sauce, brown sugar, olive oil, chopped parsley, 3 clove minced garlic and red pepper flakes. Place into a plastic storage bag and refrigerate for several hours or overnight. To prepare, remove the sirloin tips from the marinade. Discard the marinade. Heat a few drizzles of olive oil in a large cast iron or heavy skillet over medium-high heat. Add the sirloin tips. Cook for 5-7 minutes until browned and to your preferred doneness. 2 lbs top sirloin steaks, trimmed of fat (about 1 1/2 inches thick)
4 tablespoons olive oil
4 garlic cloves
2 tablespoons brown sugar

5 teaspoons harissa

Steps:

  • Cut the steak lengthwise in half and slice each half across at an angle into 2 inch wide triangles.
  • Combine 2 tbsp olive oil, garlic, sugar, soy sauce, thyme and 2 tsp harissa sauce into a zip bag (or large bowl) and add beef. Close the bag and mix by squeezing the bag with your fingers to coat all the beef pieces (or toss in bowl to coat each piece and cover).
