SISSY'S SPECIAL HAMBURGERS RECIPE

Sissy's Special Hamburgers Recipe image

Provided by musttryeats

Number Of Ingredients 7

6 premade hamburger patties
6 hamburger buns
1 tablespoon McCormick Grill Mates Barbecue Seasoning
1 tablespoon McCormick Grill Mates Steakhouse Onion Burger Seasoning
1 tablespoon McCormick Grill Mates Mesquite Seasoning
6 slices cheese, personal choice
Optional: lettuce, onion, tomatoes, pickles, etc.

Steps:

  • Add hamburger patties to a large skillet over a medium heat. Add a good amount of all the seasonings to the pan. Cook a few minutes and flip over. Sprinkle seasoning on patty. The more patties you cook, the less seasoning you need to add in pan or it will get too salty, poke 3 holes in patties. Press down releasing some blood juices. Flip over and cook a little longer. Patties are done when inside is no longer pink. If you'd like, toast the buns in either the oven or toaster. Serve the burgers in the buns, topped with cheese. Serve with the toppings of your choice.

THE BEST HAMBURGER RECIPE (AND AMAZING SECRET SAUCE)

The Best Hamburger Recipe (and amazing secret sauce) image

Yield 5

Number Of Ingredients 11

1 pound ground beef (I used 80/20 - fattier meat means a juicier burger!)
1/2 cup shredded Monterey jack cheese
1/4 cup BBQ sauce
1/4 teaspoon seasoned salt
pepper, to taste
1/4 teaspoon onion powder
3/4 cup mayonnaise
1/4 cup ketchup
1/4 cup pickle relish
2 Tablespoons Worcestershire sauce
5 hamburger buns (we like sesame seed buns)

Steps:

  • In a large bowl, combine the ground beef, shredded cheese, bbq sauce, and seasonings. Don't add too much bbq sauce or the patties will have a hard time taking shape. Shape patties that are about 1 inch thick (about 5 patties). (You can also freeze the patties after shaping them for about 1 hour to help them hold their shape.)
  • Turn grill up to high and let it get hot.
  • Reduce heat to medium-high and place the burgers on the grill. Allow this side of the patty to cook for about 4-6 minutes, but make sure it does not burn. Then flip the burger over and cook until done.
  • For the sauce, combine all sauce ingredients and whisk until well mixed. Taste and adjust ingredients to your liking.
  • Assemble the burgers and serve with the special sauce and other hamburger toppings of choice.

SMASHED HAMBURGERS WITH CARAMELIZED ONIONS

Smashed Hamburgers with Caramelized Onions image

Provided by Ina Garten

Categories     main-dish

Time 55m

Yield 4 servings

Number Of Ingredients 10

Canola or grapeseed oil
4 cups (1/4-inch) sliced red onions (2 medium)
1 teaspoon sugar
1 tablespoon good red wine vinegar
1 1/2 teaspoons dry mustard powder, such as Colman's
Kosher salt and freshly ground black pepper
1 1/4 pounds ground beef with 20% fat
1 1/4 cups grated Gruyère cheese (4 ounces)
4 sandwich potato rolls, such as Martin's
Ketchup, for serving

Steps:

  • Heat 2 tablespoons oil in a large (12-inch) sauté pan over medium heat, add the onions, and cook for 8 to 10 minutes, stirring occasionally, until the onions are tender and starting to brown. Add the sugar, reduce the heat to low, and cook for 10 to 15 minutes, stirring occasionally, until the onions are browned and caramelized. Add the vinegar and cook for 30 seconds to deglaze the pan.
  • Meanwhile, combine the dry mustard, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper in a small bowl. Place the ground beef in a medium bowl and sprinkle on the mustard mixture. With your fingers, lightly work the mustard into the beef and shape into four 1-inch-thick patties. Place them on a plate and freeze for exactly 15 minutes.
  • Heat a large (12-inch) cast-iron skillet over medium-high heat and add 1 1/2 tablespoons oil. From the freezer, place the burgers directly in the hot skillet. With a large metal spatula, firmly press each burger into the pan. Cook the burgers for 2 1/2 to 3 minutes, without moving them, so the bottoms get browned and crusty. Flip the burgers, then spoon on the onions and sprinkle the Gruyère on top. Place a lid on the skillet and cook the burgers for 1 1/2 to 2 minutes, until the cheese is melted and the burgers are medium-rare inside. Place one burger on each roll and serve hot with ketchup on the side.

OLD FASHIONED BURGER RECIPE BY TASTY

Old Fashioned Burger Recipe by Tasty image

This old fashioned-inspired burger features whiskey-caramelized onions, roasted orange mustard, and two smashburger patties. Top with fresh beefsteak tomatoes and shredded iceberg lettuce on toasted burger buns.

Provided by Tikeyah Whittle

Categories     Dinner

Time 1h30m

Yield 4 servings

Number Of Ingredients 20

4 tablespoons unsalted butter
2 large yellow onions, thinly sliced into half moons
⅓ cup rye whiskey
1 teaspoon kosher salt
2 large navel oranges
¼ cup dijon mustard
¼ cup yellow mustard
1 teaspoon orange bitters
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon ground coriander
2 lb ground beef
1 tablespoon olive oil
8 slices american cheese
4 burger buns
1 large egg, beaten
1 tablespoon sesame seed
1 cup iceberg lettuce, shredded
8 slices beefsteak tomatoes
old fashioned

Steps:

  • Make the whiskey-caramelized onions: In a large, high-walled skillet, melt the butter over medium-low heat. Add the onions and cook, stirring occasionally, until they caramelize and turn golden brown, about 45 minutes. Add the whiskey and salt and stir to combine. Remove the pan from the heat and let sit until ready to use.
  • Make the roasted orange mustard: Turn the broiler on high.
  • Use a sharp knife to remove the peel from the orange, then slice the orange crosswise into ½-inch rounds. Arrange the rounds in a single layer on a baking sheet.
  • Broil the orange slices until they begin to brown and crisp on the top, about 10 minutes.
  • Remove the oranges from the oven and transfer to a large bowl to cool slightly. Use a potato masher to mash the juice from the oranges, and then strain through a fine-mesh sieve, pressing on the flesh to extract as much juice as possible. You should have about ¼ cup of roasted orange juice.
  • In a medium bowl, whisk together the orange juice, Dijon mustard, yellow mustard, and bitters until smooth. Refrigerate until ready to use.
  • Make the smash burgers: Reduce the oven temperature to 375°F (190°C).
  • Divide the ground beef into 8 4-ounce portions, being careful not to work the meat too much.
  • In a small bowl, mix together the salt, pepper, and coriander.
  • Heat a large cast-iron skillet over medium-high heat until nearly smoking. Pour the olive oil into the hot pan. Place 2 portions of ground beef, or as many as will fit without overcrowding, in the pan and use a flat metal spatula to flatten into patties. Use the back of a wooden spoon to press the spatula more firmly to flatten each patty even more. Season each patty generously with the salt mixture. Once the patties turn golden brown on the bottoms and the edges are crispy, about 2 minutes, flip and continue cooking until the other side is golden brown, about 2 more minutes. Top each patty with 1 slice of American cheese and let melt, about 30 seconds. Remove from the pan and repeat with the remaining ground beef.
  • Assemble the burgers: Place the intact burger buns on a baking sheet. Brush the top of each bun with beaten egg, then sprinkle with the sesame seeds. Transfer to the oven and bake until the egg wash turns golden brown, about 5 minutes.
  • Open the buns and place ¼ cup of shredded lettuce on each bottom bun, followed by 2 tomato slices, a patty, ¼ cup caramelized onions, and a second patty. Spread 2 tablespoons of the orange mustard over the undersides of the top buns, then place on top of the burgers. Serve with old fashioneds.
  • Enjoy!

Tips:

  • Use fresh, high-quality ingredients: The quality of your ingredients will greatly impact the taste of your burgers. Use fresh ground beef, ripe tomatoes, and crisp lettuce.
  • Season your meat well: Don't be afraid to season your beef patties generously. A good blend of salt, pepper, garlic powder, and onion powder will give your burgers great flavor.
  • Cook your burgers to your desired doneness: Some people like their burgers cooked rare, while others prefer them well-done. Cook your burgers to the doneness that you and your guests prefer.
  • Use a variety of toppings: The possibilities are endless when it comes to burger toppings. Some popular options include cheese, bacon, lettuce, tomato, onion, pickles, and ketchup. Get creative and experiment with different combinations to find your favorites.
  • Serve your burgers hot and fresh: Burgers are best enjoyed hot off the grill. Serve them immediately with your favorite sides, such as fries, onion rings, or coleslaw.
