Yield Serves 2 or 3 as a side dish

Number Of Ingredients 5

1/2 pound Brussels sprouts
2 large garlic cloves
1 1/2 tablespoons unsalted butter
1 tablespoon olive oil
2 tablespoons pine nuts

Steps:

  • Trim Brussels sprouts and halve lengthwise. Cut garlic into very thin slices. In a 10-inch heavy skillet (preferably well-seasoned cast iron) melt 1 tablespoon butter with oil over moderate heat and cook garlic, stirring, until pale golden. Transfer garlic with a slotted spoon to a small bowl. Reduce heat to low and arrange sprouts in skillet, cut sides down, in one layer. Sprinkle sprouts with pine nuts and salt to taste. Cook sprouts, without turning, until crisp-tender and undersides are golden brown, about 15 minutes.
  • With tongs transfer sprouts to a plate, browned sides up. Add garlic and remaining 1/2 tablespoon butter to skillet and cook over moderate heat, stirring, until pine nuts are more evenly pale golden, about 1 minute. Spoon mixture over sprouts and sprinkle with freshly ground black pepper. santa clara, utah

Tips:

  • Choose firm, bright green Brussels sprouts. Avoid any with yellowing or wilted leaves.
  • Trim the Brussels sprouts. Cut off the stem end and any outer leaves that are damaged or discolored.
  • Slice the Brussels sprouts in half. This will help them cook evenly.
  • Use a large skillet. This will give the Brussels sprouts plenty of room to brown and caramelize.
  • Don't overcrowd the skillet. If you do, the Brussels sprouts will steam instead of brown.
  • Cook the Brussels sprouts over medium-high heat. This will help them brown quickly and evenly.
  • Stir the Brussels sprouts frequently. This will help them cook evenly and prevent them from burning.
  • Add a little bit of water or broth to the skillet. This will help prevent the Brussels sprouts from drying out.
  • Season the Brussels sprouts with salt and pepper. You can also add other seasonings, such as garlic powder, onion powder, or paprika.
  • Cook the Brussels sprouts until they are tender. This will take about 10-15 minutes.
