Time 40m

Yield 6 serving(s)

Number Of Ingredients 14

1 tablespoon vegetable oil
1 onion (chopped)
2 garlic cloves (crushed)
1 apple (peeled and chopped)
3/4 teaspoon dried sage
1/3 cup fresh parsley, chopped
1 teaspoon rosemary, dried
10 ounces frozen baby lima beans
1 1/2 tablespoons tomato paste
15 ounces great northern beans (rinsed and drained)
14 1/2 ounces diced tomatoes with juice
1 cup chicken broth
1 lb smoked sausage or 1 lb kielbasa
1 1/2 cups seasoned croutons, cubes

Steps:

  • In large heavy skillet, sauté thinly sliced onion and crushed garlic in oil over medium-high heat; stir in cored and chopped apple, rosemary, sage, tomatoes, northern beans, thawed lima beans, broth and tomato paste; stir to blend well.
  • Add sausage; bring to a boil, cover, reduce heat; simmer for 20 to 30 minutes until thoroughly heated.
  • Serve topped with croutons and chopped parsley.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make all the difference in your cassoulet. Look for meaty, well-trimmed pork and duck confit, and use a flavorful sausage such as Toulouse or Andouille.
  • Don't skip the browning step: Browning the meat and vegetables before adding them to the pot adds a deep, rich flavor to the cassoulet. Be sure to brown the meat in batches so that it doesn't steam, and don't overcrowd the pan or the vegetables will not brown properly.
  • Use a good quality chicken stock: The chicken stock is an important flavor component in cassoulet, so it's worth using a good quality stock. You can make your own or use a store-bought brand that you trust.
  • Let the cassoulet rest before serving: Once the cassoulet is cooked, let it rest for at least 15 minutes before serving. This will allow the flavors to meld and the cassoulet to thicken slightly.

Conclusion:

Cassoulet is a hearty and flavorful dish that is perfect for a cold winter day. It's a great way to use up leftover meat and vegetables, and it's also a dish that can be made ahead of time. If you're looking for a delicious and satisfying meal, cassoulet is definitely worth trying.
