1/2 pound boneless skinless chicken breasts, cut into 1-inch cubes
1/4 cup chopped onion
2 garlic cloves, minced
1-1/2 cups low-sodium chicken broth, divided
3/4 cup chopped green pepper
1 can (4 ounces) mushroom stems and pieces, drained
1 bay leaf
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon pepper
3/4 cup uncooked long grain rice
1 cup meatless spaghetti sauce

Steps:

  • In a large skillet, cook the chicken, onion and garlic in 3 tablespoons broth until chicken juices run clear. 1 medium onion, sliced
1 medium green bell pepper, sliced
1 1/2 lbs boneless skinless chicken breast halves, cut into bite-sized chunks
2 teaspoons italian seasoning
2 teaspoons sugar
1 (14 1/2 ounce) can stewed tomatoes

Steps:
