1 medium tomato, chopped

Steps:

  • In 10-inch nonstick skillet, cook bacon 5 to 7 minutes over medium heat, stirring occasionally, until crisp. (Drain, reserving 2 tablespoons drippings and bacon in pan.)
  • Add potatoes; spread evenly in skillet. Cook 8 to 10 minutes, stirring occasionally, until brown.

1 link smoked pineapple-bacon chicken sausage, cut into slices
1 tablespoon canola oil
1 teaspoon butter
2 ½ cups frozen hash brown potatoes, thawed
½ onion, chopped
¾ teaspoon garlic powder, divided
½ teaspoon onion powder
¼ teaspoon salt
¼ teaspoon ground black pepper
1 cup shredded Cheddar cheese

1 tablespoon milk
1 pinch salt and ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).

6 slices bacon
2 cups refrigerator hash brown potatoes
1/2 medium onion, chopped
salt and pepper
6 eggs
1 1/2 cups shredded monterey jack and cheddar cheese blend

Steps:

  • I snip the bacon into 1 inch pieces and fry up in a 12 inch deep skillet.
  • When nice and crisp remove and reserve enough bacon drippings to coat the bottom of the pan. Add some cooking oil if necessary (just a little). Place hashbrowns in pan and distribute evenly to cook. Top with chopped onion. As bottom browns turn to cook all potatoes and onions. When a nice brown all over. Pat into pan to form crust.
  • In a bowl beat the eggs till fluffy and add 1 cup of the cheese. Pour over potato crust in pan and move around till evenly distributed. Place bacon pieces all over the top. Cover with a lid and let the eggs cook through. I add the extra cheese in the end and cover again. Watch not to burn the bottom.

1 egg, beaten
1 tbsp plain flour
20g cheddar, grated
3 spring onions, finely sliced

1 egg
20g cheddar, grated
1⁄4 tsp chilli flakes (optional)

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Tip the grated potato into a clean tea towel and wring out any excess water. Transfer to a bowl and mix in the beaten egg, flour, cheese and half the spring onions. Season with plenty of salt and a grinding of black pepper.
