1 3/4 cups water
1/4 cup milk
1 (7 1/4 ounce) package kraft macaroni & cheese dinner mix
2 tablespoons butter

Steps:

  • Cook hot dogs in medium skillet on medium heat 2 to 3 minutes or until lightly browned.
  • Stir in water, milk and Macaroni. Bring to boil; cover.
  • Reduce heat to low; simmer 5 to 7 minutes or until Macaroni is tender.
  • Add Cheese Sauce Mix and butter; cook and stir until heated through.

8 ounces elbow macaroni
2 tablespoons butter
1 onion, chopped (about 1/2 cup)
1 tablespoon flour
3/4 cup heavy cream (or up to 1 cup cream- use light cream if desired)
3/4 teaspoon pepper
1/2 teaspoon salt
1/2 teaspoon nutmeg
1 garlic clove, minced
2 cups cheddar cheese, grated, divided (choose an aged cheese)
1 tablespoon fresh parsley, chopped

Steps:

  • In a large pot of boiling salted water, cook macaroni 8-10 minutes until al dente. Drain well and set aside.
  • While the macaroni cooks, melt butter over medium heat in an oven safe skillet or saucepan.
  • Add onion and cook, stirring often until soft and golden.
  • Add flour and cook, stirring for 2 minutes until flour is combined and mixture is light brown.
  • Whisking constantly, add cream slowly until well mixed. Stir in pepper, salt, nutmeg and garlic. Bring mixture to a boil, stirring.
  • Stir in 1 1/2 cups of the cheese, a little at a time, until melted.
  • Stir in the macaroni to coat with sauce. Sprinkle with remaining cheese and parsley on top.

4 ounces grated Cheddar
2 ounces finely grated Parmigiano-Reggiano or other hard cheese
1 tablespoon unsalted butter
1 small yellow onion, chopped
6 ounces cremini or white button mushrooms, sliced
3 tablespoons unbleached all-purpose flour
3 cups low-fat or fat-free milk
1 tablespoon Dijon mustard
1 tablespoon minced tarragon leaves or 2 teaspoons dried tarragon
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
8 ounces dried whole-wheat pasta shells (not the large ones for stuffing), cooked and drained according to the package instructions
4 cups small broccoli florets, cooked in boiling water for 1 minute (broccoli can be added to the pasta during the last minute of cooking, then drained with the pasta in a colander)

Steps:

  • Mix the Cheddar and Parmigiano-Reggiano in a medium bowl. Set aside.
  • Melt the butter in a large, high-sided, oven-safe skillet. Add the onion and cook, stirring often, until softened, about 3 minutes.
  • Add the mushrooms and cook until they release their liquid and it comes to a simmer, and then reduces by about two-thirds, about 5 minutes.
  • Sprinkle the flour over the vegetables in the skillet. Stir well to coat.
  • Whisk in the milk in a steady, thin stream until creamy. Then whisk in the mustard, tarragon, salt and pepper. Continue whisking until the mixture starts to bubble and the liquid thickens, about 3 minutes
  • Remove the skillet from the heat. Stir in three-quarters of the mixed cheeses until smooth. Then stir in the cooked pasta and broccoli.
  • Preheat the broiler after setting the rack 4 to 6 inches from the heat source. Meanwhile, sprinkle the remaining cheese over the ingredients in the skillet. Set the skillet on the rack and broil until light browned and bubbling, about 5 minutes. (If your skillet has a plastic or wooden handle, make sure it sticks outside the oven, out from under the broiler, so the handle doesn't melt.) Cool for 5 to 10 minutes before dishing up.

6 tablespoons unsalted butter
1 cup fresh breadcrumbs
1/4 cup grated Parmesan
1 small yellow onion, diced small
1/2 cup unbleached all-purpose flour
6 cups 2-percent milk
3/4 pound elbow macaroni
3 cups grated sharp white cheddar
1 cup grated Gruyere
1 teaspoon Dijon mustard
Kosher salt and freshly ground pepper

Steps:

  • Heat broiler. In a large straight-sided, oven-safe skillet, melt butter. Remove 1 tablespoon butter and combine with breadcrumbs and Parmesan.
  • Add onion to skillet and cook until softened. Whisk in flour and cook, stirring, 1 minute. Very gradually whisk in milk and bring to a simmer. 1 Tbsp unsalted butter
1 medium sweet onion, thinly sliced
1 pinch sugar
1/2 lb dried elbow macaroni
1/4 c unsalted butter, melted
1 1/2 c 2% milk
1/2 c half and half cream
2 tsp dijon mustard
pepper to taste
4 1/2 c shredded old cheddar, 1/2 cup reserved
1/4 c panko bread crumbs

Steps:

  • 1. In a large cast iron pan (or ovenproof nonstick pan), heat 1 Tbsp butter, add sliced onion and sugar. Cook until onions are caramelized, about 5 minutes. Spread onions evely around bottom of pan, set aside.
  • 2. In another pan, boil pasta in water about 2 minutes less than package instructions. Drain pasta and put back into still warm pot. Stir in melted 1/4 cup butter to cover all noodles. Add milk, cream, mustard, pepper and 4 cups cheese, and stir well. Pour into cast iron skillet over sauteed onions.
  • 3. Bake in preheated oven at 350 degree F, uncovered for 30 to 40 minutes, or until all liquid is absorbed. Remove from oven, sprinkle with remaining cheese and then panko. Broil until top is lightly browned, about 1 minute.
  • 4. Note: I would suggest covering the pan for the first half of baking and then remove cover. Part of the pasta was crunchy, from baking uncovered.

6 oz cheddar cheese, shredded (1 1/2 cups)
6 oz Monterey Jack cheese, shredded (1 1/2 cups)
3 tablespoons unsalted butter

  • Combine 3 1/2 cups water, 1 cup of the evaporated milk, the pasta and salt in a 12-inch nonstick skillet. Set the pan over medium-high heat and bring to a simmer. Continue cooking at a vigorous simmer, stirring frequently, until the pasta is tender and the liquid has thickened considerably, about 9-12 minutes. Meanwhile, in a measuring cup, whisk together the remaining 1/2 cup evaporated milk, the cornstarch, mustard and hot sauce. When the pasta is tender, add this mixture to the skillet, stirring to incorporate. Allow to simmer for another minute, or until the sauce has slightly thickened. Remove the pan from the heat, and begin adding the cheese one handful at a time (don't be tempted to just throw it all in at once). If the sauce begins to look too thick, you can add water to adjust the consistency (I added a few tablespoons total). Once all of the cheese is incorporated, stir in the butter then season to taste with salt and pepper.
