2 cups dried rigatoni or penne pasta (6 ounces)
1 cup coarsely chopped celery
1/4 cup chopped onion
2 cloves garlic, minced
1 tablespoon olive oil
1/4 cup Gold Medal™ all-purpose flour
2 tablespoons Dijon-style mustard
1 tablespoon snipped fresh dill or 1 teaspoon dried dill
1 teaspoon finely shredded lemon peel
1/4 teaspoon black pepper
2 cups Progresso™ reduced-sodium chicken broth
2 cans (5.5 oz) chunk light tuna (water-pack), drained
1/2 cup finely crushed herb-seasoned croutons
2 tablespoons butter, melted
1 small lemon, thinly sliced
1 tablespoon capers (optional)
Fresh dill sprigs (optional)

Steps:

  • Preheat oven to 375° F. Grease a 1 1/2-quart baking dish; set aside. Cook pasta according to package directions; drain.
  • In a medium saucepan, cook celery, onion, and garlic in hot oil until tender. Stir in flour, mustard, dill, lemon peel, and pepper. Add broth all at once. Cook and stir until thickened and bubbly, whisking to remove any lumps. Stir in tuna and pasta. Transfer to prepared baking dish.
  • In a small bowl, stir together croutons and melted butter. Sprinkle on tuna mixture. Bake, covered, for 15 minutes. Uncover and top with lemon slices. Bake, uncovered, 5 minutes more or until heated through. Let stand for 5 minutes before serving. Sprinkle with capers and dill sprigs, if desired.

6oz no-yolk noodles
1 tbsp butter
1 medium onion, minced fine
3 tbsp flour
1 3/4 cups fat free chicken broth
1 cup 1% milk
1 oz sherry (optional)
10 oz sliced baby bella mushrooms
1 cup frozen petite peas (thawed)
2 (5 oz) cans tuna in water, drained
4 oz 50% reduced fat sharp cheddar
butter flavored cooking spray
2 tbsp parmesan cheese
2 tbsp seasoned bread crumbs

Steps:

  • 1. Cook noodles in salted water until al dente, or slightly undercooked by 2 minutes. Set aside. 2. Melt the butter in a large deep skillet. Add onions and cook on medium heat until soft, about 5 minutes. Add the flour and a pinch of salt and stir well, cooking an additional 2-3 minutes on medium-low heat 3. Preheat oven to 375°. Lightly spray 9 x 12 casserole with butter flavored cooking spray. 4. Slowly whisk in the chicken broth until well combined, increasing heat to medium and whisking well for 30 seconds, then add the milk and bring to a boil. 5. When boiling, add sherry, mushrooms and petite peas, adjust salt and pepper to taste and simmer on medium, mixing occasionally until it thickens (about 7 to 9 minutes). 6. Add drained tuna, stirring another minute. 7. Remove from heat and add 1 cup reduced fat sharp cheddar and mix well until it melts. 8. Add the noodles to the sauce and mix well until evenly coated. 9. Pour into casserole and top with parmesan cheese and breadcrumbs. Spray a little more cooking spray and top and bake for about 25 minutes. Place under the broiler a few minutes to get the crumbs crisp (careful not to burn).

3 (8 ounce) packages tofu shirataki noodles, Fettuccine Shape
7 ounces tuna in water
1 (10 3/4 ounce) can 98% fat-free cream of mushroom soup
1 piece Laughing Cow light swiss cheese
1/2 cup frozen peas
3 tablespoons reduced-fat parmesan cheese
salt
pepper
garlic powder

Steps:

  • Preheat oven to 375 degrees.
  • Rinse and drain noodles well. Cut noodles (so they're not completely unwieldy).
  • Microwave noodles for one minute and pat dry.
  • Melt Laughing Cow Light cheese wedge into noodles, microwaving again for 20 seconds if necessary.
  • Mix cheese wedge thoroughly into noodles.
  • Add tuna and peas and stir well.
  • Put noodle/cheese mixture into a casserole dish.
  • Add your can of soup and one tablespoons of parmesan and mix well.
  • Season to taste.
  • Top with remaining two tablespoons of parmesan and bake in your preheated 375-degree oven for 20-25 minutes.

1 cup chow mein noodles (I prefer La Choy in a can)
1 (10 ounce) can condensed cream of mushroom soup
1 (6 ounce) can tuna
1/8 cup milk
1/4 cup peas
1 (4 ounce) can mushrooms
3 slices white bread, cubed

Steps:

  • Preheat oven to 350 degrees F.
  • Spray 11x7 (2 quart) baking pan with non-stick spray.
  • Line bottom of pan with chow mein noodles.
  • In a medium bowl, combine soup, tuna and milk.
