Yield Makes one 12-by-16-inch rectangle

Number Of Ingredients 5

2 1/2 cups all-purpose flour
1 1/2 teaspoons coarse salt
1 teaspoon sugar
2 sticks (8 ounces) cold unsalted butter, cut into small pieces
6 to 8 tablespoons ice water

Steps:

  • Process flour, salt, and sugar in a food processor until combined. Add butter. Process until mixture resembles coarse meal, about 10 seconds. With machine running, add ice water in a slow, steady stream just until dough comes together. (Do not process more than 30 seconds.)
  • Turn dough out onto a piece of plastic wrap. Flatten dough, and shape into a rectangle. Wrap in plastic. Refrigerate at least 1 hour (or overnight).

Tips:

  • For the best results, use high-quality ingredients. This includes using unsalted butter, all-purpose flour, and cold water.
  • When making the pie dough, be sure to work the butter into the flour until it resembles coarse crumbs. This will help to create a flaky crust.
  • When rolling out the pie dough, be sure to do so on a lightly floured surface. This will help to prevent the dough from sticking.
  • If the pie dough is too sticky, you can chill it for 30 minutes before rolling it out.
  • When baking the pie, be sure to preheat the oven to the correct temperature. This will help to ensure that the pie crust is cooked evenly.
  • If you are using a glass pie plate, be sure to place it on a baking sheet before baking. This will help to prevent the pie from boiling over.
  • Once the pie is baked, let it cool for at least 15 minutes before serving. This will help to set the filling and prevent it from running out.
