SLAP YO' MAMMA MEATLOAF

Slap Yo' Mamma Meatloaf image

This recipe makes even the biggest meatloaf critic ask for seconds!! I grew up eating this as a kid, and now serve it to my family. As a nice all-in-one meal, you can line the bottom of the loaf pan with quartered medium sized potatoes and place the meatloaf on top. The juices from the meat flavor and tenderize the potatoes as it bakes.

BETTER THAN MOM'S MEATLOAF

Better Than Mom's Meatloaf image

My mom's classic meatloaf was lacking in flavor and the topping was way too sweet. This "better than mom's" version still has lots of old-school appeal but has been kicked up a notch with a rich and savory flavor, plus we said goodbye to the sugary sweet topping. Sliced meatloaf leftovers make the best sandwiches. I like mine with mustard, cheese, and grilled onions!

SLAP YO MAMA MEAT LOAF

Slap Yo Mama Meat Loaf image

This meat loaf is so good it will make you want to slap yo mama for not making this for you. I love cooking with ground turkey but it doesn't hold together as well as ground chuck so I decided to mix the two meats. The mixture makes it taste great. The A-1 mixed with the ketchup is also a great balance. You will love the smell while it cooks in your oven! Enjoy!

Categories     Beef

Number Of Ingredients 14

1 pound(s) ground chuck
1 pound(s) ground turkey
1 medium onion, chopped and sauteed in oil
1 small green pepper, chopped and sauteed oil
1 cup(s) bread crumbs
1/3 cup(s) a-1 sauce
1/2 cup(s) ketchup
2 - eggs, beaten
1/2 teaspoon(s) ground black pepper
1/4 teaspoon(s) garlic powder & salt to taste
SAUCE FOR THE TOP:
1/4 cup(s) a-1
1/4 cup(s) ketchup
french's fried onions (optional)

Steps:

  • Preheat the oven to 375 degrees. Saute the Onions and green peppers in oil in a pan. Mix all the ingredients together in a large bowl by hand. Divide the sauce at the bottom of the recipe and mix half of it in the loaf and save the other half for the top at the end. Press into loaf pan. Or if you like a crunchier texture you can shape the loaf on a cookie sheet.
  • Cook for 50 minutes. Pour off excess fat and top with other half of the a-1 and ketchup mixture. Bake for an additional 10 minutes more.
  • *This is also great topped with French's fried onions sprinkled on top at the end when you cook the a-1 and ketchup mixture. Gives it a nice crunch!
  • * I also like to make mini loaves with them in muffin cups. Just spray the cups with cooking spray. You use the same temp but cook the loaves for 25 minutes then add the extra sauce on top, then cook for an additional 7 minutes. A lot quicker this way and a lot easier to serve.

SLAP MY MAMA MEATLOAF

Slap My Mama Meatloaf image

I made this last night and cooked it in the crock pot. Not how I normally make meatloaf... Everyone said it is the best I've ever made.

Provided by Georgane Vann @Georgart53

Categories     Beef

Number Of Ingredients 17

2 pound(s) ground beef
1 pound(s) ground pork
2 tablespoon(s) minced onion or one med onion chopped fine
1 teaspoon(s) garlic powder or 2 cloves garlic smashed
1 tablespoon(s) montreal steak seasoning
1 jar(s) newman's own sockaroni less 3 table spoons
1 teaspoon(s) black pepper
1 teaspoon(s) salt
3 - eggs
1/2 cup(s) italian bread crumbs
7 slice(s) bread
4 tablespoon(s) worcestershire sauce
1/2 cup(s) milk
"FROSTING'
1 can(s) tomato paste
1/2 cup(s) ketchup
2 tablespoon(s) worcestershire sauce

Steps:

  • Mix all the meat, sauces, spices together in a large bowl. Soak the bread and crumbs in the milk before adding to meat. Mix in eggs. I always use latex gloves and just use my hands. The mixture will be somewhat loose.
  • I place the rack in the crock pot then insert a slo roasting bag. I lightly..to..hard packed in the meatloaf. Now if you have a large crock pot, it might hold it all. If not I filled up the crock pot, folded in the bag and put the lid on. Then I put the left over meat loaf in sprayed muffin cups and put that in the freezer for another time.
  • I cooked it on low for 7 hours then took it out of the crock pot onto an oven proof dish. Mix up the "frosting" and completely frost the meat loaf. I then put the meatloaf lightly foil covered, into a 350 degree oven until the meatloaf browned nicely. At least 45 min. I actually cooked mine all night and let it cool, put it in the fridge for the day until about an hour before I got ready to put it in the oven. while I cooked the potatoes and cabbage that I served along side the meatloaf. Really good Of course you could add the tomato paste to the meatloaf in the crock pot that you don't have to do anything else when you get home from work. Just serve it up.

Tips:

  • Use high-quality ground beef. This will make a big difference in the flavor of the meatloaf.
  • Don't overmix the meatloaf mixture. Overmixing can make the meatloaf tough.
  • Add moisture to the meatloaf mixture. This can be done with eggs, milk, or tomato sauce.
  • Season the meatloaf mixture well. Use a variety of spices and herbs to create a flavorful meatloaf.
  • Cook the meatloaf at a low temperature. This will help to prevent the meatloaf from drying out.
  • Let the meatloaf rest before slicing. This will help to keep the meatloaf moist and juicy.

Conclusion:

Slap Yo Mama Meatloaf is a delicious and easy-to-make dish that is perfect for a weeknight meal. With its simple ingredients and flavorful spices, this meatloaf is sure to be a hit with the whole family. So next time you're looking for a hearty and satisfying meal, give Slap Yo Mama Meatloaf a try!
