SLAP YO' MAMMA MEATLOAF

Slap Yo' Mamma Meatloaf image

This recipe makes even the biggest meatloaf critic ask for seconds!! I grew up eating this as a kid, and now serve it to my family. As a nice all-in-one meal, you can line the bottom of the loaf pan with quartered medium sized potatoes and place the meatloaf on top. The juices from the meat flavor and tenderize the potatoes as it bakes.

SLAP YO MAMA MEAT LOAF

Slap Yo Mama Meat Loaf image

This meat loaf is so good it will make you want to slap yo mama for not making this for you. I love cooking with ground turkey but it doesn't hold together as well as ground chuck so I decided to mix the two meats. The mixture makes it taste great. The A-1 mixed with the ketchup is also a great balance. You will love the smell while it cooks in your oven! Enjoy!

Number Of Ingredients 14

1 pound(s) ground chuck
1 pound(s) ground turkey
1 medium onion, chopped and sauteed in oil
1 small green pepper, chopped and sauteed oil
1 cup(s) bread crumbs
1/3 cup(s) a-1 sauce
1/2 cup(s) ketchup
2 - eggs, beaten
1/2 teaspoon(s) ground black pepper
1/4 teaspoon(s) garlic powder & salt to taste
SAUCE FOR THE TOP:
1/4 cup(s) a-1
1/4 cup(s) ketchup
french's fried onions (optional)

Steps:

  • Preheat the oven to 375 degrees. Saute the Onions and green peppers in oil in a pan. Mix all the ingredients together in a large bowl by hand. Divide the sauce at the bottom of the recipe and mix half of it in the loaf and save the other half for the top at the end. Press into loaf pan. Or if you like a crunchier texture you can shape the loaf on a cookie sheet.
  • Cook for 50 minutes. Pour off excess fat and top with other half of the a-1 and ketchup mixture. Bake for an additional 10 minutes more.
  • *This is also great topped with French's fried onions sprinkled on top at the end when you cook the a-1 and ketchup mixture. Gives it a nice crunch!
  • * I also like to make mini loaves with them in muffin cups. Just spray the cups with cooking spray. You use the same temp but cook the loaves for 25 minutes then add the extra sauce on top, then cook for an additional 7 minutes. A lot quicker this way and a lot easier to serve.

Tips:

  • Use a combination of ground beef and ground pork: This will give the meatloaf a richer flavor and texture.
  • Add some vegetables to the meatloaf: This will help to keep it moist and flavorful. Some good choices include onions, celery, carrots, and bell peppers.
  • Use a flavorful sauce: The sauce is what really makes the meatloaf special. Be sure to use a sauce that you love, and that will complement the flavors of the meatloaf.
  • Cook the meatloaf slowly: This will help to ensure that it is cooked through evenly and that the flavors have time to develop.
  • Let the meatloaf rest before slicing: This will help to keep the juices in the meatloaf and prevent it from falling apart.

Conclusion:

Slap Yo Mama Meatloaf is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is packed with flavor and can be customized to your liking. Whether you like it spicy or mild, with or without vegetables, Slap Yo Mama Meatloaf is sure to please everyone at the table.
