Time 6h10m

Yield 6 serving(s)

Number Of Ingredients 5

2 1/2-3 lbs chicken thighs, skinned
1 (16 ounce) can whole berry cranberry sauce
2 tablespoons dry onion soup mix
2 tablespoons quick-cooking tapioca
3 cups hot cooked rice

Steps:

  • Place chicken pieces in a 3-1/2- or 4-quart slow cooker.
  • In a small bowl, stir together cranberry sauce, dry soup mix, and tapioca.
  • Pour over chicken pieces.
  • Cover; cook on low-heat setting for 5 to 6 hours or on high-heat setting for 2-1/2 to 3 hours.
  • Serve chicken and sauce over hot cooked rice.

Tips:

  • Use fresh or frozen whole chicken for the best results. Thaw the chicken completely if it is frozen.
  • Rinse the chicken well under cold water and pat it dry before cooking to remove any impurities.
  • Season the chicken generously with salt and pepper, both inside and out. This will help to enhance the flavor of the meat.
  • Use a variety of spices and herbs to add flavor to the dish. Some good options include garlic powder, onion powder, paprika, thyme, and rosemary.
  • Don't crowd the chicken in the slow cooker. If necessary, cook the chicken in batches to ensure that it cooks evenly.
  • Cook the chicken on low for 6-8 hours or on high for 3-4 hours, or until the chicken is cooked through.
  • To make the cranberry sauce, combine fresh or frozen whole or chopped cranberries, sugar, orange zest, and water in a saucepan. Bring to a boil over medium-high heat, then reduce heat to low and simmer for 10-15 minutes, or until the sauce has thickened.
  • Serve the chicken with the cranberry sauce, mashed potatoes, and roasted vegetables for a delicious and festive meal.
