SLOW COOKER PORK ROAST

Slow Cooker Pork Roast image

I tried this cut of meat when it was on sale, and for lack of any other ideas I took suggestions from the back of the label, with a few tweaks (like making gravy). This is a very popular dish at our house, and it could not be easier! Instead of rubbing the roast with the onion soup mix and then adding the cranberry sauce, you can also just mix the onion soup mix with the cranberry sauce and pour the whole mixture over the roast.

These are the best I've had, short of the actual grilling method of course! This is a very simple recipe that I came up with a few years ago. It's not rocket science, just ribs cooked in the slow cooker and finished in the oven. This is what I do when I want ribs during the week and have to work all day. I'm eating them within a half-hour of getting home, and they turn out perfect every time!

SLOW COOKER POT ROAST

Slow Cooker Pot Roast image

Taking the time to make a smooth, thick gravy for this slow-cooked dinner is worth it. As the pot roast cooks, the water and juices from the vegetables and meat will thin the gravy out, creating just the right consistency.

Provided by Food Network Kitchen

Categories     main-dish

Time 8h50m

Yield 8 to 10 servings

Number Of Ingredients 15

One 4-pound beef chuck roast
Kosher salt and freshly ground black pepper
1/3 cup all-purpose flour, plus more for coating
3 tablespoons olive oil
4 medium carrots, cut into 2-inch pieces
3 stalks celery, peeled and cut into 2-inch pieces
1 medium onion, cut into 1/2-inch wedges
3 cloves garlic, mashed
3 tablespoons tomato paste
1 cup red wine
3 cups low-sodium beef broth
3 bay leaves
2 sprigs fresh thyme
1/2 teaspoon ground allspice
1/2 cup loosely packed parsley leaves, chopped

Steps:

  • Sprinkle the roast all over with 2 1/2 teaspoons salt and 1 1/2 teaspoons pepper. Coat in flour and shake off any excess. Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Add the roast to the skillet and cook until golden brown on all sides, about 8 minutes, turning as needed. Transfer the roast to the insert of a 6-quart slow cooker, along with the carrots, celery, onions and garlic.
  • Add the remaining 1 tablespoon oil to the skillet over medium heat. Add the tomato paste and stir until the oil begins to turn brick-red, about 1 minute. Add the flour and wine and whisk until thick (it's OK if there are some lumps). Add the beef broth, bay leaves, thyme, allspice, 1/2 teaspoon salt and a few grinds of pepper and bring to a simmer, whisking, until the gravy is smooth and thickens slightly, about 4 minutes.
  • Pour the gravy into the slow cooker. Cover and cook on low for 8 hours. The roast and vegetables should be tender.
  • Remove the roast and let rest for a few minutes. Discard the thyme stems and strain the vegetables, reserving the gravy. Toss the vegetables with half the parsley and season with salt and pepper. Stir the remaining parsley into the gravy and season with salt and pepper. Slice the roast against the grain. Serve the meat and vegetables on a platter, moistening them with some of the gravy; serve the remaining gravy on the side.

Tips:

  • Prep ahead: Save time by chopping veggies, marinating meat, or measuring out ingredients the night before cooking.
  • Choose the right size slow cooker: Avoid overcrowding your slow cooker, which can lead to uneven cooking, by choosing a size that is appropriate for the amount of food you're preparing.
  • Use low heat: Slow cookers are designed to cook food at a low temperature, allowing flavors to develop gradually. Using high heat will overcook and dry out your food.
  • Don't overfill: As a rule, never fill your slow cooker more than two-thirds full. Overfilling can prevent the food from cooking evenly and can lead to a messy, overflowing slow cooker.
  • Add liquid: Most slow cooker recipes require some type of liquid, such as water, broth, or sauce. This helps to prevent the food from drying out and also helps to create a flavorful sauce.
  • Thicken sauces: To thicken sauces, add a cornstarch or flour slurry or a mashed potato. Avoid adding raw flour or cornstarch directly to the slow cooker as it may not mix in well and can cause lumps.
  • Don't peek: Every time you lift the lid of your slow cooker, you release heat and interrupt the cooking process. This can lead to unevenly cooked food. Only lift the lid when you need to check if the food is done or to add ingredients.
  • Consider cooking times: Cooking times in slow cookers can vary depending on the type of food you're cooking, the size of your slow cooker, and the temperature setting. Generally, it's better to err on the side of caution and cook for a longer period of time on low heat rather than risking undercooked food.

Conclusion:

Slow cookers are a convenient and versatile kitchen appliance that can be used to prepare a variety of delicious dishes with minimal effort. By following these tips, you can ensure that your slow cooker meals turn out perfectly every time. So, whether you're a busy professional, a stay-at-home parent, or simply someone who enjoys easy and flavorful meals, give slow cooking a try and discover its many benefits.
