Yield 8 serving(s)

Number Of Ingredients 13

1 onion, sliced
2 garlic cloves, minced (optional)
2 large carrots, peeled and diced
2 large sweet potatoes, peeled and diced
1 (15 ounce) can garbanzo beans, drained and rinsed
2 lbs boneless skinless chicken breast halves, cut into 2-inch pieces
1/2 teaspoon ground cumin
1/2 teaspoon ground turmeric
1/4 teaspoon ground cinnamon
1/2 teaspoon ground black pepper
1 teaspoon dried parsley
1 teaspoon salt
1 (14 1/2 ounce) can diced tomatoes

Steps:

  • Place the onion, garlic, carrots, sweet potatoes, garbanzo beans, and chicken and vegetables. Pour in the tomatoes, and stir to combine.
  • Cover the cooker, set to HIGH, and cook until the sweet potatoes are tender and the sauce has thickened, 4 to 5 hours.

Tips:

  • Use a large slow cooker: This recipe makes a lot of food, so you'll need a slow cooker that's at least 6 quarts in size.
  • Brown the chicken before cooking: Browning the chicken in a skillet before adding it to the slow cooker will help to develop its flavor and give it a nice golden color.
  • Don't overcrowd the slow cooker: Make sure to leave enough space between the chicken pieces so that they can cook evenly.
  • Cook the chicken on low for 6-8 hours: This will give the chicken time to become fall-off-the-bone tender.
  • Serve the chicken over rice or couscous: This will help to soak up the delicious sauce.

Conclusion:

This slow cooker chicken Marrakesh is a flavorful and easy-to-make dish that's perfect for a weeknight meal. The chicken is cooked until fall-off-the-bone tender in a flavorful sauce made with tomatoes, onions, garlic, and spices. Serve it over rice or couscous for a complete meal.
