Tips:

  • Prep the Apples Properly: To prevent the apples from browning, toss them in a mixture of lemon juice and water before adding them to the stuffing.
  • Toast the Pecans: Toasting the pecans enhances their flavor and adds a nice crunch to the stuffing. Spread them on a baking sheet and toast in a preheated oven at 350°F for 5-7 minutes.
  • Use Fresh Herbs: Fresh herbs like sage, thyme, and rosemary add a burst of flavor to the stuffing. Chop them finely and stir them in just before stuffing the chicken.
  • Don't Overstuff the Chicken: Overstuffing can make the chicken difficult to cook evenly and can cause the stuffing to become mushy. Fill the cavity loosely, leaving some room for expansion.
  • Cook the Chicken to the Correct Temperature: Use a meat thermometer to ensure that the chicken is cooked to an internal temperature of 165°F. This will ensure that the chicken is safe to eat and that the stuffing is cooked through.

Conclusion:

This slow-cooker chicken with apple-pecan stuffing is a delicious and easy-to-make dish that is perfect for a weeknight dinner or a special occasion. The chicken is moist and flavorful, and the stuffing is packed with autumnal flavors. With a few simple tips, you can make sure that your chicken and stuffing turn out perfectly every time.
