SLOW COOKER (CROCK POT) PORK LOIN ROAST & KRAUT

Slow Cooker (Crock Pot) Pork Loin Roast & Kraut image

Simple but tasty slow cooked pork roast recipe. The pork comes out very moist & tender with great flavor. This is a great recipe that you can cook in half the time on high, but mostly I cook it on low when I'm out of the house longer than 6-8 hours. You can also add additional seasonings to fit your tastes, sometimes I add Rosemary or Thyme or Basil or Oregano or Garlic or Onion Powder... etc... This also works well with thick cut pork chops too instead of loin roast.

Time 6h5m

Yield 4-6 serving(s)

Number Of Ingredients 8

3 lbs pork loin roast
1 large yellow onion (sliced into 3 very thick slices)
1 (14 ounce) can sauerkraut
1/2 cup chicken broth
2/3 cup Saucy Susan peach apricot sauce
3 tablespoons olive oil
salt & pepper
3 -4 garlic cloves

Steps:

  • Coat bottom of crock pot with olive oil then add the 3 thick slices of onion.
  • Place roast on top of the onion slices (onion makes a little shelf for roast so it does not stick to bottom of crock). Season pork as desired, insert garlic cloves randomly into meat then coat entire roast with "Saucy Susan" (if you absolutely cannot find "Saucy Susan", substitute with equal parts peach & apricot jelly).
  • Add the can of sauerkraut (undrained) and the broth to crock trying not to wash seasonings & sauce off of roast while adding.
  • Cover with lid & cook on high 4-6 hours or on low 8-10 hours.

SLOW COOKER PORK LOIN

Categories     main-dish

Time 5h20m

Yield 8 to 10 servings

Number Of Ingredients 10

One 3 1/2- to 4-pound pork loin
1/2 teaspoon garlic powder
1/4 teaspoon ground ginger
1/8 teaspoon dried thyme
Salt and freshly ground black pepper
1 tablespoon cooking oil
2 cups chicken broth
2 tablespoons fresh lemon juice
1 tablespoon soy sauce
3 tablespoons cornstarch

Steps:

  • Trim the visible fat from the loin. If necessary, cut the roast to fit into a 3 1/2-, 4- or 5-quart slow cooker. In a small bowl, combine the garlic powder, ginger, thyme and 1/4 teaspoon pepper. Rub the spice mixture over the entire surface of the loin.
  • In a large skillet, heat the oil over medium to medium-high heat and brown the loin slowly on all sides. Drain off the fat. Transfer the loin to the slow cooker. Combine the chicken broth, lemon juice and soy sauce in a small bowl; pour over the loin. Cover and cook on low for 8 to 10 hours or on high for 4 to 5 hours. When the roast is done, transfer the meat to a serving platter and cover to keep it warm.
  • To make the gravy, pour the juices from the slow cooker into a glass measuring cup. Skim off the fat. Measure 2 cups of liquid, adding water to the juices if necessary to make 2 cups. Transfer the juices to a saucepan, reserving 1/2 cup. Stir the cornstarch into the reserved 1/2 cup of juices until dissolved, then stir into the juices in the saucepan. Heat over medium heat, stirring frequently, until the gravy is thickened and bubbly, 2 to 3 minutes. Cook and stir 2 minutes more. Season the gravy to taste with salt and pepper. Slice the roast and serve it with the gravy.

Tips:

  • Choose a pork loin roast that is at least 3 pounds, as this will ensure that it will fit in your slow cooker and cook evenly.
  • Sear the pork loin roast in a hot skillet before cooking it in the slow cooker. This will help to seal in the juices and give the pork a nice brown color.
  • Add a variety of vegetables to the slow cooker along with the pork loin roast. This will help to add flavor and nutrition to the dish.
  • Cook the pork loin roast on low for 8-10 hours, or until it is cooked through. You can check the internal temperature of the pork with a meat thermometer to ensure that it has reached 145 degrees Fahrenheit.
  • Once the pork loin roast is cooked through, remove it from the slow cooker and let it rest for 10-15 minutes before slicing and serving.

Conclusion:

Slow cooker pork loin roast with sauerkraut is a delicious and easy meal that is perfect for a busy weeknight. The pork is tender and flavorful, and the sauerkraut adds a tangy and savory flavor. This dish can be served with a variety of sides, such as mashed potatoes, roasted vegetables, or rice.
