SLOW COOKER ITALIAN CHICKEN

Slow Cooker Italian Chicken image

This peasant style chicken dinner fills the house with a wonderful aroma as it cooks. Starting with frozen chicken helps keep it moist during the long cooking. Serve over hot cooked pasta with slabs of buttered fresh bread. We really like garlic. Feel free to reduce the quantities. If your cooker runs 'hot', check after 3 hours to see if it's almost done, then prop lid for remaining hour. If your cooker runs 'slower', check after 4 or 5 hours. You don't want to overcook the chicken as it will become dry. Once you know, you can note the cooking time on the recipe printout for future reference.

Tips:

  • Use flavorful chicken. Bone-in, skin-on chicken thighs or breasts will give your dish more flavor than boneless, skinless chicken breasts.
  • Don't overcrowd the slow cooker. If you're using a small slow cooker, you may need to cook the chicken in batches.
  • Add plenty of vegetables. Vegetables will add flavor, nutrition, and color to your dish. Some good options include carrots, celery, onions, potatoes, and zucchini.
  • Use a flavorful sauce. A good sauce will help to keep the chicken moist and flavorful. You can use a store-bought sauce or make your own. Some good options include tomato sauce, Alfredo sauce, or pesto.
  • Cook on low for 6-8 hours or on high for 3-4 hours. The cooking time will vary depending on the size and type of chicken you're using. If you're not sure if the chicken is done, insert a meat thermometer into the thickest part of the chicken. The chicken is done when it reaches an internal temperature of 165 degrees Fahrenheit.

Conclusion:

Slow cooker Italian chicken is a delicious and easy meal that is perfect for a busy weeknight. With a few simple ingredients and a little bit of time, you can have a flavorful and satisfying meal that the whole family will enjoy.
