6 bacon strips, divided
6 boneless skinless chicken thighs (about 1-1/2 pounds)
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup chopped red onion
1 cup crushed pineapple, drained
3/4 cup barbecue sauce

Steps:

  • Cut three bacon strips in half; cook until partially cooked but not crisp. Drain on paper towels., Season chicken with salt and pepper; place in a 3-qt. slow cooker. Top each thigh with a half piece of bacon. Top with onion, pineapple and barbecue sauce., Cover and cook on low for 4-5 hours or until chicken is tender. Cook remaining bacon until crisp; drain and crumble. Sprinkle over each serving.

12 to 24 large luau leaves (leaves of the taro root plant), as needed to wrap proteins
1 (2 to 3-pound) pork butt, cut into 6 pork-chop sized slices
6 (6-ounce) boneless chicken breasts
12 (3-ounce) pieces sablefish, butterfish or other fish of your choice
Sea salt, as needed to taste
24 ti leaves to serve as wrappers, or aluminum foil (ti leaves are not to be eaten, but are used as the packaging material to bake/steam the luau leaf packets)

Steps:

  • For the luau leaves, have a large bowl of ice water standing by. In a large pot fitted with a steamer basket (or use a stainless steel colander with handles), steam the luau leaves until soft but still bright green, and then plunge the steamer basket into the ice water to stop the cooking. Set the steamer basket on a utility platter or over a pot to let drain well and cool.
  • Lay the steamed luau leaves out on your work surface, then lay a piece of chicken or a piece of pork on each leaf topped with a piece of fish. Season with sea salt. Enclose the meat and fish in the luau leaves and then package them in ti leaves or aluminum foil. If you are using ti leaves, arrange the leaves perpendicular to each other in across arrangement. The stem of the ti leaf acts as the "string" to tie the package shut. The chicken and pork lau lau can then be cooked in an imu (the earthen oven) or in a conventional oven at 350 degrees F until cooked through, about 1 hour. 1 tablespoon brown sugar
1 teaspoon ground mustard
1 teaspoon garlic salt
1/2 teaspoon pepper
6 boneless skinless chicken breast halves (4 ounces each)
1/4 cup mayonnaise
1 tablespoon Dijon mustard
1/4 teaspoon dill weed
6 lettuce leaves, optional
6 kaiser rolls, split and toasted

Steps:

  • Drain pineapple, reserving 1 cup juice and six pineapple slices (save remaining juice and pineapple for another use). In a large resealable plastic bag, combine the brown sugar, ground mustard, garlic salt, pepper and reserved pineapple juice; add chicken. seal bag and turn to coat; refrigerate for at least 2 hours, turning occasionally., In a small bowl, combine the mayonnaise, Dijon mustard and dill. Refrigerate until serving., Drain and discard marinade. Grill the chicken, covered, over medium heat for 5-6 minutes on each side or until a thermometer reads 170°. Grill pineapple slices for 1 minute on each side. , Spread mayonnaise mixture on roll bottoms. Layer with lettuce if desired, chicken and pineapple. Replace roll tops.

3 -6 lbs chicken drummettes or 3 -6 lbs chicken wings (I prefer the drummetes -- You can also use a whole chicken cut up, with the skin removed)
1 (8 ounce) bottle milani 1890 French dressing
1 envelope onion soup mix
1 (16 ounce) can whole berry cranberry sauce

Steps:

  • Depending on how many people you have, you can increase or decrease this recipe very easily.
  • Put the drummettes or wings or chicken pieces in a baking dish.
  • Mix the dressing with packaged dry onion soup mix and can (s) of whole berry cranberries.
  • If you are making this for a few people, just use one bottle of dressing, one can of cranberries, and one envelope of onion soup mix.
  • Increase portions for more drummetes or wings.
  • Pour mix of dressing, cranberries and soup over the drummettes or wings, and bake at 350 for an hour and 15 minutes.

Steps:

  • In 5- to 6-quart slow cooker, mix pineapple juice, soy sauce, ketchup, rice vinegar, brown sugar, garlic, gingerroot and Sriracha sauce. Add chicken and crushed pineapple.
  • Cover and cook on Low heat setting 6 to 8 hours or High heat setting 4 to 6 hours. Once chicken is cooked through and sauce thickened, remove chicken; shred with 2 forks. 1 (15 ounce) can pineapple slices, reserve juice
1/3 cup packed brown sugar

1/4 cup cornstarch

1/2 teaspoon black pepper
