Slow Cooker BBQ Beef Recipe from Festival Foods, a grocery store in Green Bay. This recipe was featured on the local morning news. I have made this a few times and it is very good. Not too sugary like most bbq in this area. I often don't even add the ketchup, but that is our family's preference.

ADRIENNE'S OVERNIGHT BARBECUED BEEF SANDWICHES

Adrienne's Overnight Barbecued Beef Sandwiches image

Growing up, my Mom used to make barbecued beef in the crock pot and it always tasted so good. It's definitely comfort food for me. After I got out on my own, I was determined to make barbecue beef just like hers, so I tried lots of recipes and finally came up with one of my own. I was so pleased! I called her to tell her and she laughed. She had always just used a bottle of barbecue sauce! We still laugh about that and now I've had to give her my recipe!

Categories     One Dish Meal

Time 3h5m

Yield 12-18 sandwiches, 12-18 serving(s)

Number Of Ingredients 11

3 lbs top round roast
3 medium yellow onions, quartered and sliced
3 cups cattlemens smoky barbecue sauce, preferred (or other smoky sauce)
1 tablespoon minced garlic
1 (12 ounce) bottle beer
1 cup brown sugar
1 tablespoon oil
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder

Steps:

  • Season both sides of the roast with the salt, pepper, onion powder, garlic powder and minced garlic.
  • In a dutch oven on your stove top heat the oil on medium-high heat. Add the roast and lightly brown each side. This takes about one minute on each side.
  • Pour in half of the bottle of beer.Put the cap back on you will use the rest later. Top the roast with the brown sugar. Add the sliced onions.( These will cook down and the kids won't even see them.) Put the lid on and cook on medium for 1 1/2 hours.Make sure the juices are at a low simmer.
  • Take off the lid and pour in the other half of the beer, turn the roast over, mix everything around real good and put the lid back on. Cook on medium-low for another 1 1/2 hours. The juices should be at a lower simmer now.
  • When the time is up check tenderness. The meat should pull apart with a fork easily.
  • Remove the roast from the pan to a plate if it is done.
  • The onions should be cooked down to practically nothing and there should be no more than a cup of juices left in the pan. Add the bbq sauce to the onions and juice in the pan.
  • On the plate cut the roast across the grain at about every 3 inches. This will make the roast pull apart into smaller pieces. Pull the meat apart with a large fork into shreds.
  • Add the meat to the sauce mixture and mix very well. The meat will absorb all of the sauce quickly.Let it sit on very low heat for about 30 minutes before serving.

Tips:

  • Choosing the right cut of beef is essential for tender, flavorful sandwiches. Chuck roast, brisket, and short ribs are all excellent options, as they contain a good amount of fat and connective tissue that will break down during the slow cooking process.
  • Don't be afraid to experiment with different types of barbecue sauce. There are many delicious options available, so find one that you and your family enjoy. You can also make your own sauce using your favorite spices and ingredients.
  • If you don't have a slow cooker, you can also make these sandwiches in the oven. Just preheat the oven to 300 degrees Fahrenheit and cook the beef for 6-8 hours, or until it is fall-apart tender.
  • Be sure to serve the sandwiches on sturdy bread that can hold up to the juicy beef and barbecue sauce. Slider buns, hoagie rolls, or even crusty French bread are all good options.
  • For a complete meal, serve the sandwiches with your favorite sides, such as coleslaw, potato salad, or baked beans.

Conclusion:

Slow cooker smoky barbecue beef sandwiches are an easy and delicious meal that is perfect for busy weeknights or casual gatherings. With just a few simple ingredients and a little time, you can create a flavorful and satisfying meal that everyone will love. So next time you're looking for a quick and easy dinner idea, give this recipe a try.
