HEARTY STEAK AND VEGGIE SLOW COOKER SOUP

Hearty Steak And Veggie Slow Cooker Soup image

I use leftover pasta for this, but you can cook some specifically for this soup or you can buy precooked packaged pasta. I add the pasta to the individual servings instead of all at once into the soup to keep it from getting soggy. Tastes even better the next day! It has a rich broth that's full of flavor.

Tips:

  • Prep your vegetables beforehand: Cut, dice, and chop your vegetables before you start cooking to save time.
  • Use a variety of vegetables: The more colorful your soup, the more nutritious it will be. Try to include a mix of root vegetables, leafy greens, and cruciferous vegetables.
  • Add some protein: Beans, lentils, and tofu are all great additions to veggie soup. They add protein, fiber, and flavor.
  • Use a flavorful broth: The broth is the base of your soup, so make sure it's flavorful. Use a vegetable broth or a combination of vegetable and chicken broth.
  • Season to taste: Soup is a great way to use up leftover herbs and spices. Add salt, pepper, garlic, and onion powder to taste.
  • Let the soup simmer: The longer you simmer the soup, the more flavorful it will be. Simmer for at least 30 minutes, or up to 2 hours.
  • Serve with a side of crusty bread or salad: Soup is even better when served with a side of crusty bread or a fresh salad.
