JOLEAN'S CHEESE POTATO & SMOKED SAUSAGE CASSEROLE

Jolean's Cheese Potato & Smoked Sausage Casserole image

This was another one of our favorites in the 70's Very inexpensive and very easy to make. Just recently found this recipe hand-written by my Mom, and the warm feelings flood back to me, because this was a true favorite in our house. Little did I know that she was on such a tight budget, yet made things like this that we all loved!! NOTE: The meat that was used in this recipe always varied, according to whatever we had available at the time.

Time 1h

Yield 4-6 serving(s)

Number Of Ingredients 10

3 cups idaho potatoes, peeled, boiled and cut into cubes when cool, approx. 1 lb
4 tablespoons butter
4 tablespoons flour
2 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 lb Velveeta cheese, diced
1/2 cup sharp cheddar cheese, shredded
1 lb skinless smoked sausage (Eckrich is my favorite brand)
1/8 teaspoon paprika

Steps:

  • Cut skinless smoked sausage in half, lengthwise, and then chop into 1/2 inch "half moon" cuts. Cook in a frying pan for about 15 minutes, turning frequently to SLIGHTLY brown.
  • Meanwhile, put cooked & diced potatoes in 2 quart casserole. Add cooked meat and give it a gentle toss.
  • Mix all remaining ingredients (except for shredded cheddar cheese & the paprika) in a saucepan over medium heat until warm, melted and smooth. (Use a whisk and stir constantly.).
  • Pour white/cheese sauce over potatoes and meat. Sprinkle shredded sharp cheddar cheese on top, and then sprinkle paprika evenly over the top.
  • Bake in preheated 350°F oven for 35-45 minutes (watch, until golden brown on top).
  • NOTE: You can substitute: 1/2 lb. hot dogs, sliced into 1/2-inch slices OR 1/2 lb. ham diced into 1/2-inch dices OR 12 oz. can of Spam diced into 1/2-inch dices, instead of the smoked sausage.

Add the flour and cook, stirring constantly, for 2 minutes. Slowly add the milk, whisking constantly. Add the remaining 1/2 teaspoon salt and the white pepper and continue whisking until the sauce is smooth and thick enough to coat the back of a wooden spoon, about 8 minutes. 1/8 cup Korean chile powder
1/8 cup granulated garlic
Canola oil, for rubbing the ribs and smoker grates
2 racks pork spareribs

1 cup shredded jack cheese
1 1/2 cups shredded sharp Cheddar
1 cup shredded smoked Gouda
Kosher salt and pepper
2/3 cup toasted buttered breadcrumbs
1 teaspoon Korean chile powder

Steps:

  • For the honey bourbon glaze: Pour the bourbon into a saucepan over low heat; ignite bourbon to burn off the alcohol for about 5 minutes. Add the honey and brown sugar and whisk to thicken. Simmer for another 3 minutes, then remove from heat. Pour glaze into a small bowl and set aside.
  • For the beer bacon bbq sauce: Heat a large pot on high heat, then add the butter and let it melt for 1 to 2 minutes. Reduce heat to medium. Add the onions and garlic. Saute until translucent. Add the beer and bacon and cook for 8 to 10 minutes. Add the apple cider vinegar and reduce by a quarter, then add ketchup, molasses, granulated sugar, brisket drippings, chili powder, Worcestershire, salt and pepper and cook on low heat for 30 to 45 minutes, stirring occasionally. Let cool for 10 minutes, then puree in a blender until smooth, and season with salt and pepper to taste.

Tips for Smoking Cheese

* Choose the right type of cheese. Hard cheeses like cheddar, gouda, and Parmesan are good choices for smoking, as they can withstand the heat and smoke without melting. * Use a smoker that is designed for smoking food. A charcoal smoker or an electric smoker will work well. * Prepare the cheese by removing therind and cutting it into blocks or slices. You can also brine the cheese in a salt water solution for 24 hours before smoking. * Season the cheese with your favorite spices and herbs. You can use a rub made from brown sugar, paprika, garlic powder, and onion powder, or you can simply sprinkle the cheese with salt and pepper. * Smoke the cheese at a low temperature, between 225 and 250 degrees Fahrenheit. The smoking time will vary depending on the type of cheese and the desired flavor. * Monitor the cheese closely to make sure that it does not melt or burn. * Once the cheese is smoked, let it cool completely before serving.
