Time 20m

Yield 6 servings

Number Of Ingredients 7

2 cups elbow macaroni, or any shape you like
1 cup avocado oil mayonnaise
1/3 cup sweet, tangy tomato-based salad dressing (I use Dorothy Lynch Home Style dressing )
1/3 cup diced onion
1/3 cup diced radishes
1/3 cup frozen peas, defrosted for 10 minutes
Kosher salt and freshly ground black pepper

Steps:

  • Cook the macaroni according to the package directions. Drain the pasta and rinse under cold running water to cool completely. Drain well, put in a large bowl and set aside.
  • Mix the mayonnaise, salad dressing, onion, radishes and peas together in a medium bowl until well combined and evenly distributed. Pour the mixture over the macaroni and fold to combine. Taste and adjust the seasoning with salt and pepper. Serve immediately or cover and refrigerate until ready to serve.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make a big difference in the final dish. Choose the best macaroni you can find, and use a good quality cheese.
  • Smoke the macaroni salad ahead of time: This will give the flavors time to develop and meld together. You can smoke the macaroni salad for up to 2 hours, or overnight.
  • Don't overcook the macaroni: Al dente macaroni is best for macaroni salad. Cook it according to the package directions, then drain and rinse it immediately with cold water.
  • Use a variety of cheeses: A combination of cheeses will give the macaroni salad a more complex flavor. Try using a mix of cheddar, mozzarella, and Parmesan cheeses.
  • Add your favorite mix-ins: Macaroni salad is a great way to use up leftover vegetables, meats, and cheeses. Try adding some diced celery, onions, bell peppers, or ham.
  • Chill the macaroni salad before serving: This will help the flavors to meld together and make the salad more refreshing.

Conclusion:

Smoked macaroni salad is a delicious and versatile dish that can be enjoyed by people of all ages. It's perfect for potlucks, picnics, and backyard barbecues. With a little planning and effort, you can easily make a smoked macaroni salad that will be the hit of any party.
