This appetizer is very good. Served this recently at a gathering and the people who were invited kept repeating how wonderful it was. The lemon juice brings out the flavor in an otherwise flavorful dish. Courtesy of Emeril Lagasse, 2003.

Tips:

  • Choose the Freshest Ingredients: Use the freshest salmon you can find for the best flavor and texture. Fresh herbs and vegetables will also make a big difference in the overall taste of the dish.
  • Use a Sharp Knife: When mincing the salmon, use a sharp knife to ensure clean, even cuts. This will help prevent the salmon from becoming mushy.
  • Season Generously: Don't be afraid to season the tartare generously. The flavors should be bold and bright, so use plenty of lemon zest, capers, and herbs.
  • Chill Before Serving: After preparing the tartare, chill it in the refrigerator for at least 30 minutes before serving. This will help the flavors meld together and will make the tartare easier to serve.
  • Toast the Points Just Before Serving: To ensure that the points are crispy and warm when you serve them, toast them just before you're ready to eat. This will help prevent them from becoming soggy.
