1 (8-ounce) package pre-chopped smoked salmon
Kosher salt and freshly ground pepper
Prepared Champagne vinaigrette
Croutons
3 ripe avocados, thinly sliced
1/2 lemon, juiced
Pinch prepared wasabi
Fresh chives, cut into small pieces, for garnish

Sprinkle a little Champagne vinaigrette over the salmon and top with croutons. Peel and slice the avocados into 1/4-inch cubes. SMOKED SALMON WITH AVOCADO AND WASABI CREAM CHEESE

Smoked Salmon With Avocado and Wasabi Cream Cheese image

Yet another one from Dave Liberman's Young and Hungry. I have not tried this. Dave says it is has the flavors of sushi but is easy to prepare at home. He suggests leaving the sandwiches open faced to show off the ingredients and not overwhelm things with the taste of bread. The photo in his cookbook is really pretty.

Tips:

- Choose the right salmon. Look for wild-caught, sustainably-sourced salmon that is firm and has a vibrant color. - Prepare the salmon properly. Before smoking, remove any pin bones from the salmon fillet and pat it dry with paper towels. - Use a good smoker. A well-maintained smoker will produce evenly smoked salmon. - Smoke the salmon at a low temperature. This will help to prevent the salmon from overcooking and drying out. - Monitor the salmon closely while it is smoking. The cooking time will vary depending on the thickness of the salmon fillet and the type of smoker you are using. - Let the salmon cool completely before serving.
