1/2 pound smoked turkey kielbasa, cut into 1/2-inch slices
2 cups sliced fresh mushrooms
2 garlic cloves, minced
4-1/2 teaspoons minced fresh basil or 1-1/2 teaspoons dried basil
1 tablespoon olive oil
2 cups julienned seeded plum tomatoes
1/8 teaspoon salt
1/8 teaspoon pepper
Grated Parmesan cheese, optional

  • Cook pasta according to package directions. Meanwhile, in a large nonstick skillet, saute the sausage, mushrooms, garlic and basil in oil until mushrooms are tender. 1 tablespoon minced garlic (about 2-3 fresh cloves)
2 cups chicken broth
1 10-ounce can diced tomatoes (with or without chiles) ((like rotel))
1/2 cup milk or heavy cream
8 ounces dry pasta (like rotini, penne or farfalle)
salt and pepper (to taste)
1 cup shredded Cheddar-Jack cheese
1/3 cup sliced scallions (for garnish)

Steps:

  • Add olive oil to a 5 quart saute pan over medium high heat. Add onions and sausage and cook until lightly browned. Add garlic and cook for about 30 seconds.
