Number Of Ingredients 16

1/2 cup oil
4 tablespoons vinegar white wine
2 cloves garlic, crushed
2 teaspoons paprika
2 teaspoons curry powder
2 tablespoons honey, clover,liquid
1 teaspoon lemon juice
1/2 teaspoon sea salt
1/4 teaspoon black pepper, fresh grind
6 boneless chicken breasts, cut into 2 inch pieces
1 large onion, sweet chopped,2 inch pieces
1 1/2 cups small mushrooms, whole
1 red pepper, chopped 2 inch pieces
1 green pepper, chopped 2 inch pieces
1 cup grape tomatoes, whole
1/4 cup cilantro, fresh, chopped (garnish) (optional)

Steps:

  • In a non-metallic bowl, combine oil, vinegar, garlic, paprika, curry powder, honey, lemon juice, salt and pepper.
  • Mix marinade well.
  • Marinate chicken pieces for several hours or overnite, covered in the fridge.
  • Alternate chicken pieces and vegetables on metal skewers.
  • (wooden skewers that have been pre-soaked in water for at least 30 minutes, may be used).
  • Barbeque the kebabs for 10 minutes, turning frequently.
  • When ready to serve sprinkle with cilanto and enjoy.

Tips:

  • Use a variety of vegetables for your kebabs. This will add color, flavor, and nutrients to your dish. Vegetables that work well for kebabs include bell peppers, onions, mushrooms, zucchini, and cherry tomatoes.
  • Cut your vegetables into uniform pieces so that they cook evenly. For vegetables that take longer to cook, such as potatoes and carrots, cut them into smaller pieces.
  • Marinate your chicken and vegetables before grilling. This will help to add flavor and keep them moist. You can use a simple marinade made from olive oil, lemon juice, garlic, and herbs, or you can try a more complex marinade with spices and yogurt.
  • Soak your wooden skewers in water for at least 30 minutes before using them. This will help to prevent them from burning on the grill.
  • Preheat your grill to medium-high heat before cooking your kebabs. This will help to sear the chicken and vegetables and prevent them from sticking to the grill.
  • Cook your kebabs for 10-12 minutes, or until the chicken is cooked through and the vegetables are tender. Be sure to turn the kebabs occasionally so that they cook evenly.
  • Serve your kebabs hot off the grill with your favorite dipping sauce.

Conclusion:

Chicken kebabs are a delicious and easy-to-make meal that can be enjoyed by people of all ages. With a variety of vegetables and marinades to choose from, there are endless possibilities for flavor and creativity. Whether you are grilling them in the backyard or cooking them in the oven, chicken kebabs are a surefire hit that will please everyone at your table.
