Provided by Claire Robinson

Time 2h20m

Yield 8 to 10 servings

Number Of Ingredients 6

5 pounds sweet potatoes, pricked with a knife
1 pound sliced bacon
1 chipotle in adobo, chopped, plus 2 teaspoons adobo sauce
1/4 cup Grade B maple syrup
5 eggs, separated
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Roast the potatoes on sheet tray until fully cooked, about 1 hour. Set aside until cool enough to handle.
  • Meanwhile cook the bacon in large skillet over medium-high heat until crisp. Remove and drain on paper towels, reserving the rendered bacon fat. Chop bacon and set aside, reserving 1/4 cup for garnish.
  • Peel the sweet potatoes and mash. Add the potatoes to a large bowl. Stir in the chopped chipotle, adobe sauce, maple syrup, chopped bacon and egg yolks. Mix together until combined. Season, to taste, with salt and pepper.
  • In a separate large bowl, whip the egg whites until stiff peaks form. Add 1/3 of whipped egg whites to sweet potato mixture and fold to create a lighter base. Fold in remaining whites until just incorporated, leaving some white streaks.
  • Grease a 2 quart baking dish with some of the reserved bacon fat and gently pour in sweet potato souffle mixture. Sprinkle with the remaining chopped bacon. Put the baking dish on a sheet tray and bake 40 minutes. Enjoy!

SMOKY SWEET-POTATO SOUP

Smoky Sweet-Potato Soup image

A puree of sweet potatoes, apple, and leeks gets an earthy spiciness from a chipotle chile coated in adobo sauce-which can be omited for spice-free eaters. The silky Sweet-Potato Soup relies on its fresh ingredients, not heavy cream or butter, to achieve its rich flavor.

Time 40m

Number Of Ingredients 11

3 tablespoons extra-virgin olive oil
3 garlic cloves, minced
1 small leek, white and pale-green parts only, thinly sliced and rinsed well
1 tart green apple, such as Granny Smith, cored, peeled, and cut into 1-inch chunks
1 celery stalk, thinly sliced
1 teaspoon finely grated fresh ginger
2 pounds sweet potatoes, peeled and cut into 1-inch cubes
6 cups chicken stock
1 medium canned chipotle chile in adobo sauce
Coarse salt and freshly ground pepper
1/2 cup salted pepitas (green hulled pumpkin seeds)

Steps:

  • Heat oil in a large pot over medium heat. Cook garlic and leek until soft and translucent, about 4 minutes. Add apple, celery, and ginger, and cook for 3 minutes. Add sweet potatoes and stock, and simmer until sweet potatoes are tender, about 15 minutes. Add chipotle chile.
  • Working in batches, transfer mixture to a blender, and puree until smooth, transferring soup to a large bowl as you work. (For safety, remove cap from hole in lid, and cover with a dish towel to prevent spattering.) Season with salt and pepper. Sprinkle with pepitas before serving.

Tips:

  • To save time, you can use pre-cooked bacon.
  • If you don't have chipotle powder, you can use smoked paprika instead.
  • To make the sweet potatoes more crispy, roast them for a few minutes longer, keeping a close eye on them to avoid burning.
  • For a spicier dish, add more chipotle powder or a pinch of cayenne pepper.
  • If you don't have fresh cilantro, you can use dried cilantro instead. Just add it at the very end of cooking, as it loses its flavor quickly.

Conclusion:

Smoky bacon, chipotle, and sweet potatoes come together to create a delicious and satisfying dish that is perfect for a weeknight dinner or a weekend brunch. The bacon adds a smoky flavor, the chipotle adds a little bit of heat, and the sweet potatoes add a touch of sweetness. This dish is sure to be a hit with everyone who tries it.
