YUKON GOLD MASHED POTATOES

Yukon Gold Mashed Potatoes image

Learn how to make the ultimate mashed potatoes-buttery, smooth, and incredibly fluffy. (Hint: You'll want to use a potato ricer and a touch of sour cream.)

Provided by Food Network

Categories     side-dish

Time 40m

Yield 8 servings

Number Of Ingredients 7

3 pounds Yukon Gold potatoes
Kosher salt, to taste
8 tablespoons unsalted butter (1 stick), room temperature, plus additional for garnish (optional)
1/2 cup sour cream, room temperature
1 cup whole milk, room temperature
Freshly ground black pepper, to taste
Chopped chives, for garnish (optional)

Steps:

  • Peel and cut potatoes into a ½-inch dice. To prevent potatoes from wobbling as you dice, cut a flat base for the potato to rest on as you make your slices. (Note: Potatoes can be peeled and diced 1 day in advance. Store completely submerged in cold water in the refrigerator, changing the water every few hours to prevent browning.) Place potatoes in a pot filled with cold salted water (as "salty as the sea"). Bring to a boil over high heat, 6-8 minutes. Once boiling, reduce to a simmer and cook until fork-tender but not falling apart, 15-20 minutes.
  • Drain the potatoes in a colander, then add back to the pot. Turn heat to low and let the potatoes release additional moisture, 1-2 minutes. Turn off the heat.Transfer potatoes to a large bowl. Work all the potatoes through the ricer and back into the pot.
  • With the pot over low heat, gently fold in butter and sour cream, mixing just enough to melt and incorporate; overmixing will result in a gluey texture. Add the milk a splash at a time, gently mixing to incorporate; repeat until you reach your desired consistency. (You may have milk left over.) Season to taste with salt and pepper. Transfer to serving bowl; garnish with extra butter and/or freshly chopped chives, optional. Serve immediately.

Categories     dinner, project, side dish

Time 1h

Yield 6 servings

Number Of Ingredients 6

1 tablespoon plus 1 teaspoon kosher salt, more to taste
2 pounds russet potatoes, peeled and quartered
2 pounds Yukon Gold potatoes, peeled and quartered
3 tablespoons unsalted butter, cut into pieces
1/2 cup heavy cream, half-and-half or whole milk
Freshly ground black pepper

Steps:

  • Put 1 gallon of water in six-quart stockpot, add 1 tablespoon salt and bring to a boil over high heat. Add potatoes and cook until fork-tender, about 25 minutes. Drain, reserving 1 cup cooking water.
  • Smoke potatoes to taste in a smoker, according to manufacturer's instructions. If you do not have a smoker, set a 13-by-16-inch aluminum roasting pan with a rack on the stove top so that it spans 2 burners. Scatter 2 tablespoons ground hickory, apple or cherry wood chips (designed for stove-top smokers) evenly in pan. Lay a double thickness of aluminum foil over rack, and crimp any overhanging foil around edges. Arrange potatoes in a single layer on foil. Cover pan tightly with 2 sheets of aluminum foil laid side by side, if necessary. Turn both burners to medium-low, and smoke potatoes for 15 minutes.
  • Transfer potatoes to a large bowl, and mash them with a fork or pass them through a ricer or food mill. Add 1 teaspoon salt, butter, cream and 1/2 cup potato cooking water, whip until thoroughly combined. Add more cooking water, 2 tablespoons at a time, until potatoes reach a smooth, fluffy consistency. Season with salt and ground pepper to taste.

Tips:

  • Potatoes choice: Yukon Gold or Russet potatoes are the best choices for mashed potatoes as they have a creamy texture and hold their shape well.
  • The right amount of liquid: Don't add too much liquid at once, or your mashed potatoes will be too thin. Start with a small amount and gradually add more until you reach the desired consistency.
  • Don't overcook the potatoes: Overcooked potatoes will become watery and mushy. Cook them until they are just tender when pierced with a fork.
  • Use a ricer or potato masher: A ricer will give you the smoothest mashed potatoes, but a potato masher will also work well. Avoid using a food processor, as it will overmix the potatoes and make them gluey.
  • Season to taste: Salt and pepper are essential seasonings for mashed potatoes, but you can also add other herbs and spices to taste. Some popular options include garlic powder, onion powder, paprika, and chives.
  • Add butter and milk: Butter and milk will make your mashed potatoes creamy and rich. Use unsalted butter so that you can control the amount of salt in the dish.
  • Serve immediately: Mashed potatoes are best served immediately after they are made. If you need to make them ahead of time, you can reheat them gently in the microwave or oven.

Conclusion:

Smoky golden mashed potatoes are a delicious and versatile side dish that can be served with a variety of main courses. They are creamy, flavorful, and have a beautiful golden color. With just a few simple ingredients and steps, you can make this dish at home. Whether you are a beginner or an experienced cook, you are sure to impress your family and friends with this classic recipe.
