2 cloves garlic, finely chopped
2 cans (14.5 oz each) no-salt-added diced tomatoes, undrained
1 can (15 oz) spicy chili beans, undrained
1 can (15 oz) kidney beans, drained, rinsed
1 can (15 oz) black beans, drained, rinsed
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon finely chopped chipotle chile in adobo sauce (from 7- or 11-oz can)
1/2 teaspoon adobo sauce (from can of chipotle chiles)
Crushed tortilla chips, if desired
Sliced green onions, if desired

Steps:

  • In 4-quart saucepan or Dutch oven, heat oil over medium-high heat. Cook celery, bell pepper, onion and garlic in oil 3 minutes.
  • Stir in remaining ingredients except tortilla chips and green onions. Heat to boiling. Reduce heat; cover and simmer 30 to 40 minutes, stirring occasionally, until vegetables are tender and flavors are blended.

One 15.5-ounce can kidney beans, drained and rinsed

Steps:

  • Heat the oil in large pot or Dutch oven over moderate heat. Add the onion, bell pepper and carrots, cover and cook, stirring occasionally until the vegetables are soft, about 10 minutes. Add the cumin and cook, stirring, for 1 minute. Add the ground beef; raise the heat to high and cook, breaking up the meat with a spoon, until the meat is no longer pink. 3 (12 fluid ounce) cans or bottles beer
2 (15 ounce) cans tomato sauce
2 (15 ounce) cans diced tomatoes
1 (15 ounce) can pinto beans, undrained
1 (15 ounce) can red beans, undrained
1 (15 ounce) can kidney beans, undrained
2 large white onions, chopped
1 large green bell pepper, chopped
1 large red bell pepper, chopped
½ cup light brown sugar
4 cloves garlic, chopped
2 (1.25 ounce) packages chili seasoning mix
1 tablespoon cornstarch
½ teaspoon ground mustard

2 strips of OSCAR MAYER Bacon, diced
2 carrots, diced
1 stalk celery, diced
3-4 cloves garlic, diced
1 lb. ground beef
1 cup chicken stock
1 Tbsp. tomato paste
1 can (28 oz.) plum tomatoes (peeled), run through a blender or otherwise chopped
1 can (15 oz.) black beans
1 can (15 oz.) chickpeas (garbanzo beans)
1 can (15 oz.) kidney beans
1 Tbsp. ground cumin
1/4 tsp. ground red pepper (cayenne)*
1 tsp. smoked paprika
1/4 tsp. thyme
2 bay leaves

Steps:

  • In a bit of olive oil, sauté the onion, bacon, carrot, and celery, until the onion is soft and the bacon fat rendered.
  • Add the garlic and sauté a moment more.
