SMOKY VEGETARIAN BLACK-EYED PEAS WITH COLLARD GREENS

Smoky Vegetarian Black-Eyed Peas with Collard Greens image

I devised this recipe after a New Year's Day at a friend's house. She ate black-eyed peas for the good luck, not because she liked them! I challenged myself to come up with something not only edible, but delicious and nutritious as well! It's also deceptively simple (especially if you sub canned black-eyed peas for dried). I hope you like the results! This is delicious as-is or served over brown rice.

Tips:

  • Choose the right collard greens: Look for collard greens that are deep green in color and have no signs of wilting or yellowing. Smaller leaves are also more tender.
  • Wash the collard greens thoroughly: Collard greens can be gritty, so it's important to wash them thoroughly before cooking. Rinse them under cold water and remove any tough stems.
  • Use a large pot: Collard greens will wilt down a lot during cooking, so it's important to use a large pot that can accommodate them.
  • Add flavorings: There are many different ways to flavor collard greens. Some popular options include smoked paprika, garlic, onion, and bacon. You can also add a splash of vinegar or lemon juice to brighten up the flavor.
  • Cook them low and slow: Collard greens are best cooked low and slow. This will help them to develop their full flavor and tenderize the leaves.

Conclusion:

Smoky vegetarian collard greens are a delicious and healthy side dish that can be enjoyed all year round. They are packed with nutrients and have a smoky, savory flavor that is sure to please everyone at the table. Whether you are looking for a traditional Southern dish or a new vegetarian recipe to try, smoky vegetarian collard greens are a great option.
