1 (15 ounce) can black beans
1 (15 ounce) can pinto beans
1 (15 ounce) can navy beans
1 (15 ounce) can black-eyed peas or 1 (15 ounce) can purple hull peas
1 (15 ounce) can green beans
1 (15 ounce) can corn
1 small onion, chopped
1 (14 ounce) can tomato sauce
1 (10 ounce) can Rotel Tomatoes
2 cups water
1 (1 1/4 ounce) package taco seasoning mix
1 (1 ounce) package ranch dressing mix
sour cream
grated cheese
picante sauce or Tabasco sauce
sliced jalapeno
green onion
crushed tortilla chips or Fritos corn chips

Steps:

  • Drain and rinse first six ingredients in a large colander.
  • Put in a crockpot or large pot.
  • Add all other ingredients, stirring to mix well.
  • Simmer about 30 minutes to an hour or cook in your crockpot on high for 2 hours.

There are other versions of taco soup out there, this is mine and we love it. my kids eat this up and it's loaded with veggies. serve this with cheese quesadillas on whole wheat tortillas for a great kid loving healthy meal. Ingredient amounts are very flexable here. put in what you like, leave out what you don't. you can also add zuchini, greenbeans, peas, whatever will fit into your crock pot. i've even added cactus to this - YUM! this is a very economical filling meal and it freezes great. you can also stretch this further by adding cooked rice at the end if you'd like. i freeze this in individual portions in my soup bowls lined w/ plastic wrap. when frozen i pop it out of the bowl and into a large ziploc bag and store in the freezer. when somebody wants a bowl of soup we pop the frozen soup back into the bowl and nuke till hot.

1 lb ground meat (beef, turkey, chicken, pork, venison)
1 (14 ounce) can diced tomatoes
1 (16 ounce) can black beans
1 (16 ounce) can pinto beans
2 cups cabbage, chopped
1 small onion, chopped
1 bell pepper, chopped
2 carrots, chopped (about a cup)
1 (16 ounce) can corn, drained (frozen is good too)
1 cup salsa (i use mild pace)
2 -3 teaspoons beef base (see note) or 2 -3 teaspoons bouillon (see note)
2 (1 1/4 ounce) packages taco seasoning mix (to taste)
1 (1 ounce) package ranch dressing mix
1 teaspoon chopped garlic, can use garlic powder
1 cup tomato juice (optional) or 1 cup vegetable juice (optional)
1 (4 ounce) can green chilies, diced (optional)
salt and pepper

Steps:

  • cook the ground meat in a skillet seasoning w/ salt and pepper to taste and drain. (you can also used left over diced meat, just throw that in the crock pot. whatever you have on hand works great here).
  • put all ingredients in the crock pot. add water until everything is just covered. be careful, my crock pot is pretty full by now!
  • give it a stir, put on the lid, and cook on low.
  • cooking time depends on your crock pot. some cook at a higher temp than others and will take less time. i have an old rival and i put my soup on in the morning and it's perfect by dinner time.
  • you can also make this on the stove in about an hour.
  • right before serving adjust seasonings and salt and pepper to taste.
  • note- if you use bullion cubes this can get a little salty so be careful! and we like lots of seasoning in this so we use 2 full packs of taco mix.

1 (15 1/2 ounce) can pinto beans
1 (15 1/2 ounce) can dark red kidney beans
1 (15 1/2 ounce) can corn
2 (14 1/2 ounce) cans green beans
1 (14 1/2 ounce) can stewed tomatoes
1 (14 1/2 ounce) can diced tomatoes with juice
1 (10 ounce) can diced tomatoes with green chilies
12 ounces beer
1 (1 1/4 ounce) envelope taco seasoning mix
1 (1 ounce) envelope ranch dressing mix
6 corn tortillas
vegetable oil
salt, to taste
cheddar cheese, to taste (optional)

Steps:

  • Drain pinto beans, kidney beans, corn and green beans. Add to large stockpot.
  • Add stewed tomatoes, diced tomatoes, beer and seasoning mixes to stockpot. Stir.
  • Bring to a boil over medium high heat, stirring occasionally. Boil 5 to 10 minutes, stirring frequently. Reduce heat to low and simmer for 15 to 30 minutes.
  • Meanwhile, brush a small amount of oil onto tortillas. Alternatively, spray tortillas with cooking spray. Sprinkle with desired amount of salt.
  • Bake tortillas on a cookie sheet in a moderate oven for 5 to 10 minutes, until lightly browned and crisp. Watch closely. When cool, crumble tortillas.
  • Dish soup, sprinkle with crumbled tortillas and with shredded cheddar cheese, if desired.
  • Note: If you like your soup extra spicy, you may want to substitute an additional 10 oz. can diced tomatoes and green chilies for the 14.5 oz. can diced tomatoes in tomato juice. If you like your soup thinner, add tomato juice or water until desired consistency.

Threw this together one night to use up some leftovers and knew after the first taste that I'd make it again repeatedly! I love that it's really easy to adjust ingredients to taste and use what's available in the pantry/fridge currently. I've also added sweet potatoes and cabbage and increased the vegetable broth for a more stew-like meal or to change up the leftovers. I would have also added peppers if I'd had them!

1 tablespoon olive oil
1 onion, chopped
2 cups chopped mushrooms
2 ½ (11.5 ounce) cans tomato juice
2 cups vegetable broth
2 cups frozen corn
2 cups cooked rice

1 large tomato, seeded and diced
1 (4 ounce) can sliced black olives

Steps:

  • Heat olive oil in a large pot over medium heat. Add onion and mushrooms; cook and stir until softened, 3 to 5 minutes. Pour in tomato juice and vegetable broth. Stir in corn, rice, black beans, tomato, black olives, taco seasoning, and cilantro. Simmer soup until flavors combine, 20 to 30 minutes.

1 (15 ounce) can whole kernel corn, drained

1 (8 ounce) can tomato sauce
1 onion, diced
1 (6 ounce) can diced green chile peppers
1 green bell pepper, diced
1 (1.25 ounce) package taco seasoning mix
4 cloves garlic, minced

½ cup crushed tortilla chips, or to taste

Steps:
