SESAME SOBA NOODLE AND VEGETABLE SALAD

Yield Serves 6

Number Of Ingredients 10

2 tablespoons sesame seeds
12 ounces dried buckwheat noodles (fancy soba)*
4 tablespoons peanut oil
1 tablespoon oriental sesame oil
6 tablespoons seasoned rice vinegar*
12 ounces English hothouse cucumber, seeded, shredded
8 ounces carrots, peeled, shredded
6 large radishes, trimmed, sliced
3 green onions, thinly sliced
*Buckwheat noodles and seasoned rice vinegar are available at Asian markets and in the Asian section of some supermarkets.

Steps:

  • Toast sesame seeds in heavy small skillet over medium-low heat. Cool.
  • Cook noodles in pot of boiling salted water until just tender but still firm to bite, about 8 minutes. Drain. Rinse noodles under cold water until cool. Drain well; transfer to large bowl. Add both oils and toss to coat. Mix vinegar and all remaining ingredients into noodles. Season with salt and pepper. Sprinkle with sesame seeds and serve.

Tips:

  • Use fresh vegetables: Fresh vegetables will give your salad the best flavor and texture. If you can, buy organic vegetables to avoid pesticides and herbicides.
  • Cook the soba noodles al dente: Al dente means "to the tooth" in Italian, and it refers to the ideal texture for pasta and noodles. The noodles should be cooked until they are tender but still have a slight bite to them.
  • Make the dressing ahead of time: The dressing can be made up to 2 days ahead of time and stored in the refrigerator. This will save you time when you're ready to assemble the salad.
  • Assemble the salad just before serving: The salad is best when served fresh. If you assemble it too far in advance, the vegetables will start to wilt and the dressing will make the noodles soggy.
  • Serve the salad with a variety of toppings: The toppings are what really make this salad special. You can use whatever you like, but some good options include grilled tofu, roasted peanuts, chopped cilantro, and a squeeze of lime juice.

Conclusion:

Soba noodle vegetable salad is a healthy and delicious dish that is perfect for a light lunch or dinner. It is also a great way to use up leftover vegetables. The salad is easy to make and can be tailored to your own taste preferences. So next time you're looking for a quick and easy meal, give soba noodle vegetable salad a try.
