IMMUNITY BOOSTING GREEN SOUP RECIPE BY TASTY

Immunity Boosting Green Soup Recipe by Tasty image

Here's what you need: olive oil, garlic, fresh ginger, scallions, fresh oregano leaf, fresh parsley, cayenne, ground turmeric, black pepper, low sodium soy sauce, broccoli florets, chicken stock, swiss chard, baby spinach, avocado, lemon juice, kosher salt, pumpkin seed

Provided by Mercedes Sandoval

Categories     Lunch

Yield 8 servings

Number Of Ingredients 18

2 tablespoons olive oil
8 cloves garlic, minced
fresh ginger, peeled and sliced 3 inches (7cm)
4 scallions, chopped
3 tablespoons fresh oregano leaf
1 cup fresh parsley, plus more for serving
¼ teaspoon cayenne
1 teaspoon ground turmeric
½ teaspoon black pepper
2 tablespoons low sodium soy sauce
4 cups broccoli florets, tough stems trimmed
6 cups chicken stock, or vegetable stock
4 cups swiss chard, loosely packed, thick stems trimmed, roughly chopped
1 lb baby spinach
1 avocado, ripe, diced
¼ cup lemon juice
kosher salt, to taste
pumpkin seed, toasted, for garnish

Steps:

  • Heat the olive oil in a large pot over medium heat. Add the garlic, ginger, and scallions. Sauté for about 3 minutes, until very fragrant but not browned.
  • Add the oregano, parsley, cayenne, turmeric, black pepper, and soy sauce. Cook for 2 minutes, until the herbs begin to wilt.
  • Add the broccoli and cook until bright green and beginning to release some moisture, about 5 minutes.
  • Add the chicken stock. Cover, reduce the heat to low, and simmer for about 10 minutes, until the broccoli starts to soften.
  • Add the Swiss chard and stir until wilted, about 30 seconds. Add the baby spinach, a few handfuls at a time. Cook until just wilted and stir to incorporate into the soup before adding more. Once the spinach is wilted and the broccoli stems can be easily pierced with a fork, remove the soup from the heat. It is important not to overcook the greens, as they will begin to lose their vibrant color and nutrients.
  • Cool the soup for 15 minutes, until it can be safely transferred to a high-speed blender, if using. With a standing blender or immersion blender, puree the soup briefly to combine, then add the avocado, lemon juice, and salt and blend until creamy, with no lumps remaining.
  • Enjoy the soup hot or cold, garnished with toasted pumpkin seeds and parsley, if desired.
  • Enjoy!

Add entire mixture to broth. Turn off heat, and stir in miso paste.

Tips for Making Immunity-Boosting Soups:

  • Use a Variety of Vegetables: The more diverse the vegetables, the more nutrients and antioxidants your soup will contain. Aim for a mix of leafy greens, cruciferous vegetables, root vegetables, and legumes.
  • Add Garlic and Ginger: These two ingredients are powerful immune boosters. Garlic contains allicin, a compound with antimicrobial and antiviral properties, while ginger has anti-inflammatory and antioxidant effects.
  • Use Bone Broth: Bone broth is rich in minerals and nutrients that support immune function, such as collagen, glycine, and glutamine. You can make your own bone broth or use a good-quality store-bought brand.
  • Add Herbs and Spices: Herbs and spices not only add flavor to your soup, but they also have medicinal properties. Some good choices include turmeric, oregano, thyme, rosemary, and black pepper.
  • Don't Overcook the Vegetables: Overcooked vegetables lose their nutrients and flavor. Aim to cook them until they are tender-crisp.
  • Enjoy Your Soup Regularly: The more often you eat immunity-boosting soup, the better. Aim to have a bowl at least once a week, or more if you're feeling under the weather.

Conclusion:

Immunity-boosting soups are a delicious and nutritious way to support your immune system and stay healthy. By following these tips, you can make a soup that is packed with nutrients, antioxidants, and other immune-boosting compounds. Enjoy your soup regularly and reap the benefits of a stronger immune system.
