Puree zucchini and kale with potato for a rich and creamy soup.

Provided by Food Network Kitchen

Time 1h

Yield 4-6

Number Of Ingredients 12

2 tablespoons olive oil
1 cup chopped red onion
1 cup chopped peeled potato
3 to 4 sprigs fresh thyme
1 medium clove garlic, minced
1 sprig fresh rosemary
Kosher salt and freshly ground black pepper
3 1/2 cups chicken broth
1 1/2 cups chopped zucchini
1 1/2 cups firmly packed chopped kale or baby kale, plus more, thinly sliced, for serving
1/4 to 1/2 cup heavy cream
Cayenne or paprika, for serving

Steps:

  • Heat the oil in a medium saucepan over medium heat. Add the onion and cook, stirring, until tender, 3 to 5 minutes. Add the potato, thyme, garlic, rosemary, 1/2 teaspoon salt and a few grinds of black pepper and cook, stirring, until the potatoes are well coated, 2 to 3 minutes more. Pour in the broth and bring to a simmer.
  • Add the zucchini and simmer until the potatoes are tender, about 15 minutes, adjusting the heat as needed to maintain a simmer. Stir in the kale and cook 5 minutes more. Remove from the heat, discard the thyme and rosemary and let cool at least 5 minutes. Carefully puree until smooth with a handheld immersion blender or in 2 to 3 batches in a blender (do not fill the blender more than halfway full per batch).
  • Stir in the heavy cream and reheat the soup if necessary, adjusting the consistency and seasoning with additional water, salt and pepper.
  • Serve hot sprinkled with cayenne or paprika and topped with sliced kale.

### Tips
  • Choose the right kale: Curly kale is the most common type used in soups, but you can also use Lacinato kale (also known as Tuscan or dinosaur kale) or Redbor kale. Just be sure to remove the tough stems before chopping.
  • Wash the kale thoroughly: Kale can be gritty, so it's important to wash it thoroughly before using it. Fill a large bowl with cold water and swish the kale around to remove any dirt or debris. Then, drain the kale and pat it dry.
  • Don't overcook the kale: Kale is a hearty green that can withstand a bit of cooking, but it's important not to overcook it. Otherwise, it will become tough and bitter. Add the kale to the soup towards the end of the cooking time, and cook it just until it is wilted.
  • Use a variety of vegetables: In addition to kale, you can add a variety of other vegetables to your soup, such as potatoes, carrots, celery, onions, and garlic. This will give the soup more flavor and texture.
  • Season the soup well: Be sure to season the soup with salt, pepper, and other herbs and spices to taste. You can also add a bit of lemon juice or vinegar to brighten up the flavor.
### Conclusion Kale and potato soup is a delicious and nutritious meal that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a hearty and healthy soup, give kale and potato soup a try. You won't be disappointed.
