1 envelope Lipton Onion Soup Mix
1 lb ground beef
1 teaspoon oregano
1 (28 ounce) can tomatoes, undrained (I use the diced ones)
2 cups water
1 1/2 cups elbow macaroni
1/3 cup grated parmesan cheese
mozzarella cheese

Steps:

  • In large frypan, brown ground beef;drain;add onion soup mix,oregano,tomatoes,and water.
  • Bring to a boil,stir in macaroni.
  • simmer covered,stirring occasionally for 20 minutes or until macaroni is tender.
  • Stir in parmesan cheese and top with grated mozzarella.

12 ounces linguine
12 ounces cherry or grape tomatoes, halved or quartered if large
1 onion, thinly sliced (about 2 cups)
4 cloves garlic, thinly sliced
1/2 teaspoon red-pepper flakes
2 sprigs basil, plus torn leaves for garnish
2 tablespoons extra-virgin olive oil, plus more for serving
Coarse salt and freshly ground pepper
4 1/2 cups water
Freshly grated Parmesan cheese, for serving

Steps:

  • Combine pasta, tomatoes, onion, garlic, red-pepper flakes, basil, oil, 2 teaspoons salt, 1/4 teaspoon pepper, and water in a large straight-sided skillet. Bring to a boil over high heat. Boil mixture, stirring and turning pasta frequently with tongs, until pasta is al dente and water has nearly evaporated, about 9 minutes.
  • Season to taste with salt and pepper, divide among 4 bowls, and garnish with basil. Serve with oil and Parmesan.

1-1/2 pounds ground turkey
1 medium onion, finely chopped
1 medium sweet red pepper, finely chopped
1 can (28 ounces) diced tomatoes, undrained
1 can (14-1/2 ounces) fire-roasted diced tomatoes, undrained
1 can (14-1/2 ounces) reduced-sodium beef broth
1 can (4 ounces) sliced mushrooms, drained
1 tablespoon packed brown sugar
1 tablespoon chili powder
8 ounces uncooked angel hair pasta
1 cup shredded cheddar cheese

Steps:

  • In a large cast-iron or other heavy skillet, cook the turkey, onion and pepper over medium heat until meat is no longer pink; drain., Add the tomatoes, broth, mushrooms, brown sugar and chili powder. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes. , Add pasta; return to a boil. Reduce heat; cover and simmer until pasta is tender, 30-35 minutes. Sprinkle with cheese. Cover and cook until cheese is melted, 2-3 minutes longer.
