2 teaspoons baking powder
1 teaspoon vanilla extract
icing sugar, for decorating
3/4 cup semi-sweet chocolate chips
1/3 cup brown sugar
1 tablespoon cinnamon

Steps:

  • Preheat oven to 350F and grease a bundt pan.
  • Mix all of the topping ingredients together and set aside.
  • Combine melted butter, sugar, eggs and bananas and mix well.
  • In a separate bowl, combine the sour cream and baking soda, then set aside.
  • In another bowl, combine the flour, salt, and baking powder. To the butter mixture, alternately add the flour mixture and the sour cream mixture, beginning and ending with the dry mixture. Stir in the vanilla extract.

  • Bake for 55 - 60 minutes, or until a cake tester comes out clean.
  • Cool completely on rack before removing from the baking pan. Dust with icing sugar prior to serving.

Tips:

  • To ensure the cake is moist, use ripe bananas and be sure the sour cream is at room temperature when you mix it into the batter.
  • If you don't have sour cream on hand, you can substitute plain yogurt for sour cream.
  • Feel free to add in other mix-ins such as chopped nuts or raisins to the batter.
  • Don't overmix the batter, as this can result in a tough cake.
  • Bake the cake until a toothpick inserted into the center comes out clean. Be sure not to overbake the cake, as this will make it dry.
  • Serve the cake warm or at room temperature, with a dusting of powdered sugar or a dollop of whipped cream.
